@Alleguede and I have been talking today - in previous years we have done the show and tell on Friday and the communal dinner on the Saturday. Given the location (ie not downtown Toronto) we have decided that this year we will do both on the Friday night. We will get ourselves down to the new Gouter location - thinking make your own pizza, bunch of apps, maybe BBQ, sundae bar with in-house made ice cream - and the show and tell.

Then Saturday we can sort our own dinners.

Probably a good time to find out who is vegan, vegetarian or gluten intolerant.

We have one vegetarian.  I suffer through some gluten sensitivity for Rodney’s pastries!!

I'm looking forward to seeing everyone (some for the first time altogether, and some for the first time since the Toronto workshop) in a few weeks and welcoming you all to Buffalo!

As Kerry mentioned upthread, I will be hosting the Friday night show and tell on my patio. I'm planning a heavy hors d'oeuvres and drinks situation with wine and hard and regular seltzers, and will be doing some of the cooking myself and ordering a few things in. If we get rained out, I have a backup plan but hopefully we will not need to use it.

Saturday dinner will more than likely be at Tacos, Community and Beer, where they have a covered patio with heaters if we need them. I have heard great things about their food (tacos, unsurprisingly) but have not yet eaten there myself. It will be a buffet-style service and as Kerry mentioned, drinks will be on your own.

If anyone has any dietary restrictions (assume omnivorous menus throughout the weekend with lots of vegetarian choices), please let me know so I can make sure we create an inclusive and accommodating experience. Similarly, if anyone has any mobility challenges, please let me know that too - my house is a ranch with just one step up from the patio but our rain plan is a second-floor event space with no elevator or lift.

At this early stage, our weather in Buffalo is encouraging - this past weekend I got the patio entirely set up and there's no sign, at least for the next couple of weeks, that I'll regret that. Hoping it stays that way!

One of us is vegetarian (lacto-ovo), so options would be great.  Thank you so much for hosting Friday - let’s all hope the weather is fantastic!

  3. I want to make sugar-free bars with Callebaut cocoa liquor and Erythratol.  Any advice on ratios?  Should I make it in my melanger or would just melting, adding and tempering work? I made the mistake of buying Callebaut sugar-free with Maltitol and it is definitely a laxative.  Now still stuck with a lot of it.  Any advice is most appreciated.

Will anyone who is coming to the workshop in Buffalo be driving there across the NY State Thruway (I-90) with an extra seat in the car? There are a number of convenient meeting places at various exits in the Syracuse area (from I-481, exit 34A, over to Weedsport, exit 40). Or if you're taking the scenic route, NY 104 along the south shore of Lake Ontario, that goes right through my hometown.

My husband, who some of you may remember from the last workshop at Niagara College, would like to come to the dinner on Saturday night. He won't be able to attend the Saturday workshop because he needs to attend the university commencement exercises Saturday morning, a 2.5 hour drive away. We're a one-car family, so if I drive myself over on Friday, my husband has no way to get there for dinner. So I could either drive over with my husband for the Saturday night dinner (only) or to catch a ride over with someone who will be passing through so I can participate more fully, and my husband will come when the ceremonies are done and join us all for dinner. Or I could take a train, but that's less easy if I want to bring a box of tools with me. The Exchange St station is right around the corner from the hotel, and there are 3 trains that are scheduled to get there from Syracuse on Friday. One of them might even get me into town early enough to join you all for dinner that night! But given a choice, I'd rather ride with a friend or three than with a few hundred people I don't know. 😀 In any case, my husband and I would stay over Saturday night after dinner and drive ourselves home Sunday, so if I use one of your car seats on the way over, you could use it on the way home to hold all your chocolates and any other purchases.

I don't currently plan to do the master classes, so a ride on Friday would be my preference. I do know Buffalo reasonably well, and can navigate you to the hotel.

Let me know if I might fit into your travel plans, please!

Hi there Melissa!  I will be passing through Syracuse on my way. Happy to share the ride!
