  1. Does pure alcohol also needs particles to freeze like pure water? The way the supercool water experiment works, if I were able to bring pure liquor or wine to some temperature below its normal freezing point (query: what is the freezing point of wine or liquor at different percentages of alcohol?), wouldn't I be able to replicate the same result? Pour liquid wine and watch it freeze?
  2. Per Se has a less expensive menu for lunch on the weekend, I believe. It wouldn't work for your birthday, and it is very hard to get a reservation: Brooklyn Fare. And not a nice restaurant, but recommended to me by someone whose opinion I trust: Torrisi (no reservation taken).
  3. Why are you not going to Per Se? JG is not necessarily cheaper, and I am sorry to disagree with others, it is terrible -- I was just there last week. In New York City, I would say Per Se or Le Bernardin. Marea is pretty good. Joel Robuchon is fine. Daniel is fine. Just neither is very exciting. Per Se can be exciting. Nobody I know (and whose opinion I trust) has ever had a killer meal at EMP. The average quality of food in New York City is outstanding, but there is nothing very exciting at the very top. It is kind of sad. Happy birthday!
