  1. i love my new kitchen..........but chronique has a huge kitchen for the size of the restaurant....new town has a crazy central unit stove,not functional the cooks tell me though,its beautiful ,and blue check out MOLTENI s new stove on there website its straight out of star trek......

  6. i dont think weve gotten into cook like a chef enough,i have recently watched bisjack and bell ,and the teacher from pei,it gives me cold chills down my spine,it also makes me want to leave the profession entirely,cmon i cant beleive you guys and gals arent screaming about this one,its like getting root canal but i cant turn i it off, ...........the macadamia deep fried ice cream turned out just way i want it....its perfect
  7. he was at intercontinental for a few months as sous or whatever,then at xmas or shortly therafter they slacked him off,is it there that they do a smoked salmon wig wam,or tee pee,or something,he should be on cook like a chef......
  8. i heard this morning jean francois vachon was the new chef........ex club des pins ex globe,ex caprice,ex intercontinental.............,to be honest i was expecting someone more exciting,for a full blown renovation that is,not that he wont do a good job ,but i thought the owners of med would be more aggressive .. thats all,claude, zack and michel are hard acts to follow...

  10. 4 of my partners went and all enjoyed the evening,everyone is talking about the oyster ,sea urchin, foie gras concoction,sounds like overkill to me though,the re occuring comment is how expensive it was,but cest la vie,the whole soto morimoto crew dined at globe from 2.00 am till 430 this mornin,morimoto in our restaurant ,wow,twas a late night though.........the cajun lobster too,was a hit,can anyone talk about the sake he brought with him ?

  15. thanx for the honest report,it means alot to me,the sausages you are refering too are toulouse.i love your choice of other restaurants you ate at previously....rosalie is noisy,and the girls are pretty ,so are the boys. they are also all smart hard working students in different fields,thank god for the football team though,we served 140 persons saturday nite ,but it was the hockey.....not football......im replying to you with a smile ,thank you for your report.david mcm
