I finally! left the Forest Service after a long career wild land firefighting and went full time chocolatier.  Found a great commercial space in Rock Island, WA and plan to do wholesale, online, and some retail at a local open air market until I gain enough funding to build myself a retail brick n mortar.  My current focus is making chocolate truffle, and chocolate bars, but plan to branch out, busyness dependent.
