    Leftover chicken in the fridge, a couple of cups of ricotta, i made a quick ravioli with a chicken drumstick. Pasta sauce was quick san marzano, salt, sugar and thyme. The snapper roasted for 45 or 50 minutes and I had the time so, I was able to make the pasta and stuff it and cook it in 25 minutes. Quick steamed broccoli rabe, then tossed with garlic oil, anchovies, a little red pepper and parmesan. 3 pound red snapper roasted.

    Actually it was the first time I have ever been there. I have worked with the owner before on a few different projects but, seriously speaking, the girl did not know that. I think the stars had aligned.

    Hey thanks. I get my pork chops from a few places. Last year I purchased a whole Berkshire Pig just for my house. And am just about finished with it. I was actually at the Essex Street Market in Manhattan on Saturday and stopped by Heritage Meats. After purchasing those two steaks and the marrow bones, the girl behind the counter offered these up to me for free. Certainly a pleasant surprise. I also have two pretty pork chops in my freezer from Fleischers in Brooklyn. I bought them last weekend but, did not have time to eat them so, they went in the freezer.

    Dinner last night, while I was planning on making that truffle and potato dish, I got home too late to do much cooking.. A simple mussel dish, grilled pork chops, left over roasted vegetables and a cauliflower puree. Also a nice salad.

    Don't worry too much, I personally have found in my experience, that Indian Dishes don't often have beef in them. It is really not that big of a deal.

    Nice. Tasty-looking. What did you use for the "curry" component? It is basically an imported Indian curry paste from a bottle, which I pimp up with some extra coriander, fennel and cumin seeds, and chilli. I'd prefer to do it all from scratch, but I just can't get the spices here. While it looked really lovely, it did throw me off with the Indian Beef combo though, I am sure it can be found on some Indian menus though, who cares, I am sure it was delicious.

    Would it be blasphemy if I were to replace the potatoes with chicken fat roasted parsnips. There is something about roasted parnsips that have that earthy, truffle flavor. Run it through the rice and tamis and give it that suspended soupy texture. The chicken fat in the parsnip talk to the yolk. Not to mention the chicken jus. Maybe a potato and parsnip combo. Maybe like one quarter part parsnip to replace some butter (with chicken fat) and give it another level.

    Really nice. I have these three containers of truffles sitting in my pantry. Samples from work. One is 2.5 ounces of urbani of carpaccio di truffe, one is 1.4 ounces of sabatino summer whole black, the other is an urbani summer black whole. I know it's no fresh but. Life goes on. I have the chicken jus in cubes in the freezer. Sounds like tomorrow's dinner. Potatoes are Yukon?

  13. I often stick left overs in pasta or ravioli or lasagna even. I had some left over roasted salmon from my daughters dinner. So, I mixed the salmon with some marscapone and stuffed in ravioli. A little thyme, a little onion, butter and pasta water. Not bad for leftovers.

    Simple dinner tonight.. two mackerels for like 6 dollars. Broiled, topped with onions cooked in a agridolce type deal. Mustard green salad, toasted hazelnuts and smoked eel. Photo prior to saucing.

    Thanks all for your comments. The steak was a Ribeye, it looks like a Strip but, it was a ribeye. It looks like it rounded out a bite more with cooking. Thanks again. So many langoustines! Do you live in Scotland or something or are you cooking these 12 dollar a piece guys for dinner on a nightly basis.

    Brewed tea, added a ton of sugar to make it like a Southern Sweet Tea. Added salt and pepper and soaked the chicken over night. Fried the chicken at 320. I find this to be the best temp to fry chicken. The inside is allowed to cook while the outside does not burn.

    Chicken and turkey soup. Started with chicken feet, turkey wings, thyme, a half a bottle of white and some vegetables. Made a huge pot. Tossed in 4 lbs of chicken backs a few hours in. Took out enough drained stock after 7 hours for a few bowls. Cooked some raw chicken drumsicks and some onion, celery and carrots to be put in the bowls. Tajarin noodles cooked separately. Tossed in at the end. It was really nice. Asparagus was selling for 1.50 a bunch. Tossed some runny eggs and parm on top. Kale salad
