  1. anyone eat here yet? The chef there is the old executive chef I worked under before he went to STK. Just wondering how the food was.
  2. at Metropolitan restaurant in Utah we occasionally do a shaved fennel and apple salad with rocket and lemon truffle vin.
  3. thanks RJwong and Chris. As for price range, I'll be doing a few splurge dinners but not too many as I'm on a line cooks pay scale! I'll be staying with friend and will have a car. Not sure how many folks are coming. not that it matters, I'm going where the good food is!
  4. I'm headed to Vegas in mid August and know I am going to Bouchon (prally multiple times) and mebbe Nobu. Any other 'must eat' places that I should hit.

  6. [soapbox] Not to be nit-picky, but I taught this to my students not long ago: the correct formula for calcium chloride is CaCl2. Because calcium forms cations with a charge of 2+ and because the chloride anion has a charge of -1, in order to make a neutral formula you need to use 2 Cl anions for every 1 Ca cation.   9. it is trivial, but the Chicago city councel can pat themselves on the back thinking they are doing a good thing. Seriously, wasting taxpayer money on banning duck liver when there is MUCH more going on in the world that needs attention. It's selfish and shortsided of them. I can only hope that such a mindset has a harder time taking root in other major culinary cities.
  10. WOW, what a crock of crap. This does not bode well for the fututure of cooking the good stuff. Seems as if we are all getting pressed to eat Kraft dingles on wonder bread (but it's safe, yaaaay). I know that when I go into work tonight and someone orders a fioe, I will cook it proudly (as if I did not allready!) for soon it could be someone's last foie.

  13. for cheap eats around the convention center I would remmomend Junior's Tacos, and Squatters and Red Rocks brewpubs are both relitively cheap.
  14. I don't make it up to Park City that often so I'm not too sure of the food up there. However if you do make it down to salt lake there are a few places I would reccomend. Fresco: nice, small, northern italian. good food, great setting Red Iguana: some of the best mexican food I have had anywhere. a must see. The mole is freaking brilliant. Metropolitan: (I'm a little biased cause I cook there). We just rolled out a new spring menu that has some delicious things.
