  1. Mum and Oma are Dutch. I haven't been to Holland but hopefully I will go with Mum one day.
  2. My offerings for nibbling on Christmas day while we unwrap our presents. Oma's Gemberkoek, Speculaas and Gevulde Koeken. I've also bought a chocolade letter for each of my daughters and my neice.
  3. Gevulde Koeken My photo is not as artistic as yours, Chufi. These look and taste so much better than the bought ones I've had. The filling was exactly as I remembered my Oma making. The only problem I had was with the oven temperature. I found I needed to turn the oven up to about 170 C and even then they took about an hour to cook. I did a quick search on the net and found suggested temperatures ranged from 160 C to 200 C for this recipe so I felt okay about turning up the heat. I guess it all depends on oven type, fan forced etc. Tasty anyway Edited to fix typo
  4. Quick question. Has anyone made these and how did they turn out? Someone on another thread mentioned they did not turn out very well. I checked the recipes and they seem to be correct.. Just wondering what went wrong. ← Chufi, I have my filling all ready and will be making the gevulde koeken either today or tomorrow. I will let you know how I get on.
  5. I've been to Miyajima a few times and love to watch the the whole proces of making momiji manju. Some of the vendors have huge windows so you can see the production line. I like the chocolate ones. The oysters were in short supply on our last visit thanks to a severe storm.
  6. Mmm Takoyaki. There used to be a street vendor just outside the Coop near Mefu Jinja (Hyogo-ken) We used to stop there after shopping. Sadly on my last visit to Japan both the vendor and the Coop had gone. We did find some nice Takoyaki near the Tsukiji markets though. Finding tako in rural Western Australia is a bit tricky so I haven't had takoyaki in a while.
  7. I don't know how much things have changed in the 17 or so years since I was in High School in Japan but everyone in my class brought bento from home. We would put our desks into groups and someone would go down to the tea room and collect a huge kettle of hot tea (kocha) for the class. I can't recall anyone ever using the cafeteria.
  8. Oh Yum, my Oma used to make these for me. I made some speculaas with your recipe (I already had the kruiden) and just had to have a sandwich with the bread I had just made also. It tasted so good I had to stop and ring my Oma just to tell her. Chufi, I have just joined eGullet thanks to your wonderful recipes and would like to wish you well. I would also like to add that in your Apple Pie ingredients in Recipe Gullet you have missed out the egg in the dough and did not mention the size of the tin. Edited to add that Mum just checked her old Dutch cookbook and her recipe doesn't contain egg in the dough anyway. Thank you for the fantastic food along with the mouth watering photos.
