  1. I am very sorry to everyone for being absent from tonight's dinner. I had the pleasure of having my first child on Friday May 19th. I hope everyone enjoyed themselves and hope you can spread the word.
  2. A simple cure that is easy to do at home. 1/2 sugar 1/2 sea salt Whole peppercorns Fennel seed Fresh thyme Cure the salmon for about a day. Make sure you rinse of the cure before you begin cooking. You can also make a wet brine.
  3. I will do my best to accomodate everyone. Katie spoke to me about a month ago about the dinner. If it makes it any easier, I would be happy to give prix-fix menu.   4. There are only four or five, which are more on the gourmet side. When they opened the restaurant, Danny flew to Texas to purchase this massive charcoal grill. The pizzas are grilled not baked.   5. Piccolo's was owned and operated by Dan Nejberger. Dan and his son are partners of Carambola Restaurant in Dresher, Pa. I opened the restaurant with them 9 years ago, The owner of Maggio's and many others worked for Danny at Piccolos. Everything on the menu from pizza's to ribs he took those recipes from piccolos.
  6. They have sit-down as well as take-out. It is always good. I was there tonight for their gnocchi bolognese. The gourmet pizza is the way to go. Village Shire Shopping center Buck Road Holland, Pa 18966/ 215-860-2747 Avalon Cafe in Newtown, Pa also has good pizza.
  7. I use a creme brulee' recipe, but i exclude the sugar and vanilla and add fresh herbs and nutmeg. I cook them in ramikens just as you would the brulee. Our new menu just started last week, the pork loin was taken off, and the menu was revamped a little.
  8. I am glad you enjoyed your meal. The sorbet was pineapple mint from Capogiro.
  9. The limoncello and olive oil are also good.
  10. After my many visits to C-Town for the NRA show, I have been looking for this particular Polish hot dog. Well I finally found it. A 8 to 10 oz. all beef Polish hot dog. I am working it into my lunch menu, hopefully will have it complete by Tues or Wed. I have seen nothing like this anywhere in the tri-state area.
  11. When I put this menu together a year ago this month, i didn't think the Goat cheese cake would be so popular. Over time I have reduced the size by almost 1/2. It is a good appetizer for two or more. I admit that it is alot of food for one person, but over time it has become the most popular item on the menu.
