  1. Jackal10, I've had a similar problem and you mentioned a hole under the crust -- that was the problem I had. Do you have an idea as to what causes that? I don't get it all the time and I think I'm over-proofing on those times that it happens, but I'm not sure.
  2. Thanks everyone -- some of these I knew of, some are new. But, I haven't used any of them as of yet and now feel I am at least going in the right direction.

Hi, I'm just starting out at home (trying to anyway) in the pastry business and I'm looking for a place to buy good chocolate for reasonable prices. $16 / pound retail just ain't going to cut it for me. Does anyone have any good sources. Not looking for vast quantities, but good prices from reputable sources (online?) for 11 lb blocks or boxes of pistoles.
