  1. Slivered and cooked nopal cactus paddles on their own have that hint-of-saliva quality similar to okra. But they accompany meats really well.

    Although they're cultivated in the US and Mexico, I'm sure you can find them locally - try some of the markets on Commercial Drive. (On Vancouver Island, Thrifty's usually carries them. Of course you'll need to de-prick them before slicing!)

  2. I am writing a column for the magazine I co-publish (Northwest Palate, out of Portland but covering BC, WA, OR and ID) on cocktails and spirits. I am looking for recommendations of places in BC that have unusual themed cocktail menus that I might write about. I'm guessing Vancouver would be the center of focus here, but it could be Victoria or anywhere else (Kelowna?).

    Northwest Palate currently has a contest to name the Vancouver Cocktail!

  3. Good question - since you're talking about gonads (of the sea urchin - prettily referred to as roe).

    I didn't know there was a harvesting season.

    I do know there is a size restriction - 55 mm diameter - the legal size limit for harvesting in B.C.

    (It takes your average urchin about three to four years to reach this size.) And the restriction supposedly allows the spikey little ones to spawn at least once before they end up on your sashimi plate.

    The photo is by Jean LeVac of the CanWest News Service - and clearly looks like he or the prop artist/stylist plonked a still-chilled trout on a plate with some slices of juiceless lemons.

  6. Another izakaya joint looks ready to open (bottles of soya sauce filled and set on tables, yet signs posted on window indicate both foh&boh positions have not been filled) next to La Bretagne Crêperie on Jervis off Robson.

    I actually won a small contest in naming this restaurant

    Was there a prize - or just a surprise - for winning the contest?

    Memo - it's hard to win in the first place when you've got plenty to show

  7. When Connor Butler was chef at Pearl on the Rock, Mia Stainsby wrote that he had - "acquired a candy floss machine on eBay for 50 bucks and well, I'm not so sure it was the best use of cotton candy but he wrapped it around thyme as a garnish".

  10. Just had all 4 of my wisdow teeth taken out....

    Swelling seems to have gone down.

    But I have HUNGRY and I do not want any more

    fruit smoothies, congee or soup.  :wacko:

    Any helpful hints?

    While I feel for your pain - and the post-wisdow situation you find yourself in - I think, first off, a dictionary might help.

    I have hungry, too.

    Do you have a blender for savory-soup/stew smoothies?

    Failing that, I recommend BOOZE!
