  3. As the operations manager for C and Nu, I would like to offer everyone in this forum a warm hello. Thank you to all who have stumbled upon Nu or sought us out in the last couple of days. Our first, official day of business is September 2nd. Everything culminating towards these dates is a pre-opening, or "dress rehearsal". During this time, we will be serving a limited number of guests. We will gradually increase that number when we feel we have achieved our level of guest experience. A previous e-Gulleteer noted that a soft opening is neither a luxury nor a necessity but simply a choice on the proprietor's part. I couldn't have written it better myself. Mssrs. Kambolis, Clark, Belcham and I measure what we do thoughtfully and carefully, never rushing in where "angels fear to tread". It has been our choice, and our pleasure, to launch Nu with a whimper, and not a bang. Broadway mega musicals don't open gloriously on Broadway, they open quietly in Poughkeepsie, NY, first. The ones that seem to succeed do, anyway. So, until September 2nd, enjoy the dress rehearsal. Yours in service, Leonard
  4. Certainly second that choice. The chef/owner (Terry) is a great cook - we had a staff party there a couple of years back and everything was wonderful. Carol at Adesso oops I should have specified that I meant Rex. ← If anyone is looking for a chef to do a rotisserie pig, Terry is the man! I thought that I would post the following link for the readers: http://www.vanaqua.org/conservation/oceanwise.html OCEAN WISE Ocean Wise is a new Vancouver Aquarium Conservation in Action program dedicated to making environmentally responsible seafood choices easy for consumers and restaurants alike. By committing to, and making, adjustments to the seafood offered on their menus, participating restaurants will be eligible for recognition within the Ocean Wise program. This will entitle them to promotion under the Ocean Wise brand banner in a variety of media and tourism settings. The Ocean Wise program will encourage restaurants to provide more sustainable seafood dishes and make it easy for diners to choose restaurants and dishes that have as small an impact on the oceans as possible. John Nightingale, President of the Vancouver Aquarium and Patrick O'Callaghan, VP of Conservation and Education, present the Ocean Wise Plaque to Harry Kambolis, the owner of C Restaurant at the Launch on January 13th. Using healthy competition between restaurants, existing promotional networks and the net effect of bulk purchasing decisions, Ocean Wise will reward and promote sustainable seafood sales throughout the seafood supply chain. In order for restaurants to participate in the Ocean Wise program, they must be dedicated to a process of continuous improvement in the seafood they serve, removing unsustainable seafood items from their menu and replacing them with sustainable alternatives wherever possible. Any restaurant that has at least one seafood item on their menu can participate in the program. Preliminary research will be conducted to identify select species/stocks to target regionally from the “Avoid” list of the Monterey Bay Aquarium's Seafood Watch card. The species chosen will be those which coincide with the species that most regularly appear on Vancouver menus. Working with Monterey Bay Aquarium's Seafood Watch staff, we will establish an intensive research and assessment phase to commence information gathering on local (BC) fish stocks not already examined by the Seafood Watch program. The Vancouver Aquarium and C Restaurant were pleased to announce their commitment to the Ocean Wise program. Thanks for the clarification ← Mu Moo might be a fetching name for Neal's next venture, meaning: "My cow in a very large dress".   17. It is amazing how you can say something so brutal about an individual you have never met. This just happens to be my cousin, so I may be a little bias. A little tidbit for you. Erin spent time in a few restaurants shadowing management and front line employees. We were happy to have Erin with us at C for a couple of nights. Remember that one key employee who left, who was so amazing that everyone still brings up. Well that would be Erin if you had her working for you. I am sure that Mr. Fuller would love to have Erin working at one of his restaurants. And the way it was shown. It was not a criticism of your cousin's acting ability, but of the writing. At the 30-minute mark (when I made that comment), that character didn't look as though she could manage a lemonade stand. I should have been clearer, perhaps, although I can't see that I (unlike others) have said anything that says "this or that actor is terrible"; I was talking about the character. I'm sorry to you and your cousin if she took it badly; there's a little Vancouver eGullet "Earl's Hostess" riff that bounces through the forum, so that is the comparison I chose. And having majored in drama and theatre through high school and university, I feel I am actually somewhat qualified to have an opinion. ← I guess it is all about being clear. Leonard
