I'm all for experimenting and trying new things. I want that up front. If you like Stilton don't bother with the fruit studded kind. They are completely different cheeses. The Stiltons with fruit aren't blue, nor do they even come close to the flavor of a pure Stilton. Just a warning before your experiment sends you off the deep end.

I wouldn't go with goat cheese for authenticity reasons. If you can't find Montasio try something else like Piave or Baita Friuli. These are both nice cows milk cheeses from similar backgrounds. Or if you want to switch regions try Parmigiano Reggiano. But you can order all of these things online. Unless your in Minneapolis/St. Paul in which case you should see me! The beauty of ordering these is that they ship so well. They are all hard cheeses that can sit out for quite a while before being adversely affected.

Not quite true. Truffle salt. Can be taken with you to movie theaters and put on the popcorn there. Plus makes everyone near you jealous. But whatever the vehicle of delivery, Truffles are the best.

Hey Bruce, If they don't come out perfectly even you could always put a design in the soup using a knife or some such. The last picture I saw was something similar to a yin yang symbol. Just makes it harder to tell if they are precisely even. Shannon
