Fusili with meatballs (made from salsicce) in a sauce from diced tomatoes, onion, garlic, rosemary, fennel seeds and parmesan.

Flemish Carbonnade with beef chuck, caramelized onions, bacon, plenty of trappist beer, parsley, thyme, taragon, garlic, brown sugar and apple vinegar. Served over egg noodles and sautéed chard with onions, tomato and anchovies.

Simple Goan fish curry with cumin, coriander, chili, ginger, garlic, tomatoes, turmeric, tamarind paste, light brown sugar, cilantro and coconut milk served over rice and with carrot salad (briefly cooked to al dente and mixed with paprika, cinnamon, cumin, cayenne, lemon juice and parsley)

Sometimes you want a good meal with very little effort - cut up an onion and some garlic, mix with cherry tomatoes, olive oil, acetic balsamico, tyme and some fresh Italian sausage and put in the oven for 45 minutes. Add two cans of white beans and put back in the oven for 10 minutes - enjoy

Green chicken enchiladas - filling made from poached chicken breast, onions, cilantro and queso fresco. Green sauce/salsa made from broiling tomatillos, shallots, garlic and jalapeño, then puréed with cilantro.

Casserole of pasta and shredded, poached chicken breast with a sauce made from a few glasses of roasted red pepper, parmesan, thyme, shallots, garlic and parsley and dollops of chèvre and ricotta

Quick fish stew with kohlrabi, asparagus, shrimp and peas cooked in a sauce made from coconut milk, garlic, ginger and lime juice. Cod was pan-fried separately and added at the very end. Served over rice.

Lemon shrimp risotto - made with a broth from shrimp shells and lemon peel. Shrimps added at the end and cooked off heat with the residual heat. Afterwards added lemon juice and zest as well as a little bit of heavy cream, egg yolk and basil. And finished with a few drops of olive oil.

Taking advantage of the fresh corn - rigatoni with fresh corn, crumbled Italian sausage, plenty of thinly sliced garlic, chili, lots of basil and sauce made with pasta water and lots of butter and parmesan.

Stir fried dish with flank steak, plenty of celery, peanuts, garlic, jalapeño, cilantro stems, cilantro leaves and a sauce made with oyster and fish sauce. Served over rice

Black Bean Stew with bacon, kielbasa, chili, mashed black beans (to give some body to the stew), garlic and rice. Separately sautéed some collard greens and tomatoes which were added at the end. Served with a salad made from baby spinach, sliced raw mushrooms, almonds, scallions, orange supremes and cucumber with a dressing from oil, rice vinegar, honey, minced ginger, mustard and a few drops of toasted sesame oil

Casarecce with vegetables (asparagus, leek and peas). The pasta was cooked risotto-style which always gives the dish a nice creamy consistency without actually adding any cream or butter. Finished the dish with chives, mint and lemon zest.

Cauliflower-sweet potato curry baked in the oven with a sauce made from cardamom, mustard seeds, cumin, fennel seeds, chili flakes, turmeric, garam masala, ginger, garlic and coconut milk. Served with a salad made from grapes, mint, dill, pine nuts and lime juice as a acidic counterbalance to the curry
