    Yeah...steam pans work I guess. Thick or Thin? I personally like thick cut bacon...it it is also pricier than the thin cut bacon... The thin...I have found gives taste and texture... where as thick cut bacon add to the taste, texture and the meal itself.

    BACON!!! What does everyone like? Precooked Its faster but IMHO it does not taste as good. I have used when I worked at one of the big three... Another one of the big three use to have a bacon that was raw and needed to be cooked. (this was pre dumb down era) I t was round...so when you put it on the burger...it covered the whole burger. They no longer have this. The danger here is either undercooking or overcooking it. Personally I like cooking the bacon when the burger is orderd. When I tried this...it cooked faster than the burger did and it was fresh and juicy...it just takes more thought to not burn the bacon while you are cooking the burger. But cooking the bacon fresh make a overall great product. What are your thoughts?

    You're not going to go off on one of those Million Man March-style numerology tangents, are you? ← lmao....Oh never that!...I just know that I can never sit down to rest...thinking "I'm the best"...I have to keep working to be the best at what I/we do. never gettign I am here to serve food to the people who are also my customers. I listen to them...I am not one to get complacent.

    I will have to see how "out of hand" things get. This is the thing that I am fighting within my own mind. Do I NEVER want to run out of food? or Is is O.K to say...Sorry we are out of this or that for the day. Right now...my customers have found out that if you dont get to No.9 early...you wont get a burger. Maybe this is O.K because of the nature of the business right now. Once I get perm diggs...this could get ugly. Also...my mindset of No.9... is that we have to keep working to be either the perfect 10 or the new No.1.

    Well...while it is on the griddle..I put on the cheese, Pick and grilled onions. I know what you are talking about though...condiment placement is an actual science...or at least I like to think so. Think about this...I like toast with real butter and jam...no jelly here. society somewhat forces you to eat this kind of toast with the jam side up, but...if you think about it...your taste buds are not at the roof of your mouth. just by turning the toast upside down..with either butter or jam...it is this side that come in contact with your taste buds first...it taste alot better. So my thoughts is that I want my customers to taste the seasoned burger first, the condiments must then work themselves around to add to the beef flavor as well as the overall texture of the burger. This is one of the reasons for toasting buns in my opinion. 1. with the texture of the toasted side, the wet condiments dont soak in as fast 2. To add texture and sometimes flavor to the burger. As far as ket and must, right now...I just let the customer put on as much or as little as they wish. In the future...the person cooking will do this. I do plan on using lettuce...but no iceberg...I prefer Romaine because of color and texture. I dont use just everyday onions...No.9 has its own onions...cant be duplicated...worked on it for three years...well it can but it would be pretty hard.

    I noticed your said Pizza Parlor...are you from back east? I remember Nehi sodas...thoes were good times ← I grew up with Shakey's Pizza Parlors and Farrell's Ice Cream Parlors. Guess the "parlor" stuck in my head even though those chains have long since faded away. I've been a west coast kid all my life and was just being generous in my description. The place was a tiny pizza shop with just enough room for two tables and a refridgerated case for the Nehi's in a neighborhood strip mall. Everything else in the shop was counter and kitchen. edited to add: Don't let the soda be a sticking point in your progress to getting the B&M no. 9 to open. You can always open stocked with name brands of soda while behind the scenes you develop your own. Then later on you can introduce them as your own artesinal line of sodas. ← Still have plans for the B&M...I have to stay flexable...especially with this economy.

I remember Nehi sodas...thoes were good times ← does anyone remember tahitian treat fruit punch? i used to walk to the corner store to get a can for 25 cents...................those were the days!! by the way, i'm from back east.......................washington, DC!!! ← I'm also from DC, born and raised, and while the name Tahitian Treat sounds familiar tastykimmie, I can't remember whether or not I've ever had that soda. Definitely Rock Creek sodas ruled in DC back in the day, as well as RC Cola, Orange Crush, Nehi, and (not your favorite Magus ) Cokes in both the original tall and short green bottles. I was especially fond of all the fruit flavors of Rock Creek and, all things being equal as far as the food was concerned, would patronize an establishment that had Rock Creek over one that did not. ← i have a rock creek strawberry sitting right here on my desk at work.......... tangerine and peach are great too ← Some how...Rock Creek does not ring a bell with me...*I must think haaarder*

    Thats cool that they have alot of old sodas...but these people are on crack with thoes prices It would be good to get alist of sodas then go from there.

The sad thing is that they have changed their formula over the years. Today...the taste is watered down... DC...huh.....I've been through there more than a couple of times...on my way to VA Beach.

    50!! Even though it sounds great...the first thing I think of is 10 cent deposits here in Michigan, storage and the cooling...Oy! thats enough to make one meshuga! Its a crazy idea...I kinda like it but I don't know how feasible that is. I really dont like gimmicks...but then again...one can look at not having a gimmick a gimmick within itslef. I would also have to find more than one distrib that carry the sodas I want. My time of owning a hotdog cart has taught me to NEVER rely on one distributor for any product...that is asking for trouble. I am a strong believer in being self reliant when it comes to the products I offer. This is why I like the idea of making my own sodas, you can not get that taste anywhere else but from me. With that said...yes, there will always be substitutes...but its not No.9. I have learned so much from other companies by just watching what they do as well as what they dont do. That is why I market everything under No.9...if I decide to carry or drop a product...it always has my name on it and people dont get dependant on any "outside" product just because of someone elses brand recognition.

    B&M=Brick and mortar...ie "traditional restaurant" Some are trying to bring them back...Crush and Jones soda...But I like the ones down south...they were a bit beat up around the edges and the glass was thick...you can tell they have been around for a while. I guess I just have an old soul. I like the way things were done back then. Not because its "cool" now, its just that life seemed so simple then...even though it wasn't from what I'm told and finding out. It just seems that people took pride in what ever they did. My 1953 GE fridge is a testament to that...it still runs...it still keeps cold...now its not the most energy efficient thing...but dawg gone it...it still works, and its built like a tank!

    I actually have a 1953 GE fridg that I am going to have painted in my logo red with my logo on it. This is for the B&M. I guess they both...Coke and Pepsi left a bad taste in my mouth...no pun intended. I called them both to try and find out what I could expect out of each bag in a box as far as volume goes. They did not want to help because I did not have a "location" yet. So my thought is if you dont help me now...when I am little...well...with out the foul language...I figure hey...I will go off on my own. They do so much business...I am small change to them and I'm O.K with that.

    Yeah...I have arelady sourced the bottles...but like you said...it is work. Cleaning the bottles, lables..stuff like that. It all depends on the type of carbonation your using as well. I already purchased the stainless steel kegs. I plan to force carbonate at first. It's the path of least resistance. I figure this with a seven pass cold plate will work for a while. I just need to replace the tubes on the cold plate...cleaning thoes things are a bear.

    Well, I dont like Coke...More a a Pepsi kind of guy...unless its with 151, then there is no sub for coke. The tricky part is the "Natural Flavors" That could be anything. But with say...Ice cream...its lets you know the combonations of things that were used and what could be used to get the same tast. Its also based on the Nutrition Facts lable on the product. Now it cant do like a package of cookies...but a 5gal tub of ice cream...that it can do because there is enough product there to get a good sample of a batch....but this is somthing I will use wisely....dont want to go around "tasting" like someone esle. ← so wait your telling us that the this stealth probe/computer program only deals with large batches? It's dead on for a 5 gallon bucket of ice cream but not a package a cookies? Huh? Here's an idea use 5 boxes of cookies instead of 1! If this is the case, go buy a whole case of 2 liters of coke! while your at it get a few 5 gallon buckets of Heinz ketchup...and let us in on the secrets... Magus, lets return to earth here friend...your discounting yourself with this secret computer program your telling us of and you also need to wake up and realize that soda development should be the LEAST of your worries... just admit that the franchising idea got to your head too quickly and that the computer program is fake... ← Well...Kbear...Allow me to steer you in the direction of researching formulas. Second...Coke has been around for a LONG time...do you think they are not smart enough to conceal how they do things? If you have been reading the thread...you would have found that ..."I dont care for Coke"...so why would I want to taste like them. As far as ketchup is concerned...I dont remember ever going across town because someone had great ketchup...nuff said. I dont believe I have discounted anything...this "my friend" is called street knowledge 101...knowing the secrets of your competiton without revealing your own. Knowledge is power...remeber that. I may use this knowledge...I may not...but I will always have a choice.... Franchising idea...you are correct...its been in my head from day one...Read the beginnign of the thread...Building a Burger empire!!...the last time I checked...that does not mean one store If you would like to beleive that the program is fake...I have no problems letting people believe what they wish.

    Well making soda in bottles have been discussed way up thread. This is something that has been in development for a while. Which bottles to use, Crown caps vs twist, logos and lables. That stuff was easy. Getting the final product to where I want it...now that took alot of tasting. When it is introduced, Rootbeer and Cream soda will be the first. Getting the cola down is the hardest part.
