Last of the Aldi ham went into a split pea soup last night. We both love split pea soup with ham. HC

I am hoping that is pronounced 'daybrie', it just sounds so much more palatable. HC

It was ground beef mixed with egg, spices, French onion soup and bread crumbs, browned on a flat top, then simmered in a gravy like sauce that was spiked with Worcestershire sauce and served with mashed potatoes and an over cooked vegetable (that was probably canned). The combination of the meat, gravy and mashed potatos was what spoke to me. Of course, in high school, I was a growing lad and pretty much everything spoke to me back then. HC

I am pretty well convinced that French onion soup and Worcestershire sauce are big contributors to the flavor, but am becoming increasingly convinced that languishing for an hour or more in a hotel pan in the steam table plays a big roll in imparting that illusive flavor and tenderness to the finished product. I think I will move my efforts from a covered fry pan to the slow cooker and see how that works. HC

I felt compelled to add mushrooms to the gravy. It seems, somehow incomplete without them, although I do not remember them in the gravy from either cafeteria. HC

I confess a shameful truth: I always loved the Salisbury steaks from the cafeteria at both high school and college, and try to incorporate them into my life from time to time. Last night was such an occasion. They improve each time I try, but have not yet achieved the status I seek. HC

What Are You Preserving, and How Are You Doing It? (2016–)

@Shelby, That is the way to do it!!!!!!!! HC -
I made chicken liver pate today. I buy the livers in 20 OZ containers, but by the time I drain and trim them all up, I usually get a little over 3 ramekins, plus a little extra, which I had for lunch today. I used to put ramp butter on top, but now I put in little sprigs of thyme and top it with gelatine. Of course, I am the only one in the house who will even look at them, let alone eat them. HC

Last night, Deb had a nice little rib eye steak, and I countered with a lamb 7 bone 'chuck' steak. Deb managed to finish hers, but I struggled with mine, which was a bit bigger. We had a pickling cuke and Compari tomato salad on the side. HC

Even though I had breakfast this morning, I found myself hungry again around noon. So, I broke out these sardines on saltines (the other SoS). HC

Inspired by @heidih's comment, breakfast was a two egg omelet and a medley of sautéed zucchini, sugar snaps and some sweet peppers (left over from making pizza last night). Fresh salsa goes without saying. I am a salsa freak! HC

Sad news, indeed! We met Katie at the first Varmint pig picking and liked her at once. The first batch of lemoncello I ever made was from her recipe. HC

It was back to the basics this morning. Scrapple, fried zucchini, poached eggs on toast, fresh salsa and homemade, lightly sweetened lime acqua frizzante. HC

I found this good looking asparagus on sale for 99 cents for a 1 lb package at my local Aldi and assumed they were from South America. Your question sent me into the trash bin for verification, and sure enough, they were from Peru. HC

I had a debate with myself this morning about either having breakfast before I left the house, or lunch, when I returned (I seldom do both). Lunch won the debate. Spicy chicken ramen, tree ears, sautéed sugar snaps and kimchi. HC

Small chef salads (that included some crispy, thick cut bacon gifted to Deb, by a pig farm, one of the truck shop customers, she deals with on a regular basis) and shrimp cocktails. HC

My first one showed up more than a week later than they said it would. Even though we were home, the delivery guy dropped it off on the porch and slunk away without a single knock on the door. The package was so badly mangled, I think he did not want to confront me. I have my doubts about DHL. HC
