  1. "...some other countries (including the UK) cassia cannot legally be sold as cinnamon..." - I think it's mad though to call one cinnamon the true cinnamon, and call the other "not true" cinnamon? "..Ceylon cinnamon tradition from Spain.." - Inherited from Spain..! Super interesting...
  2. Hello, So there's this chart that showed that 44% of Sri Lanka's cinnamon exports were to Mexico. That's so interesting, but I was wondering, why from Sri Lanka? Is there a local monopoly in the market or something or maybe country-to-country level trade agreements between Mexico and Sri Lanka? The 44% was for 2023 - https://www.seylany.com/en/cinnamon-export-stats/sri-lanka/mexico/2023/
  3. Quark...! Hmm interesting. I had to search what it was. But an interesting choice! Muesli with cheese is definitely something to try.
  4. Here in this land, clay pots are like a whole standard. While we've got a ton of steel saucepans and you know the whole cooking arsenal, clay pots are pretty common in probably every house that's got a family. Single bachelors homes - I don't think so if they don't cook. The reason why it's so popular is because cooking in a clay pot kind of gives a different flavour to the food. I'm really curious, how do you cook? Do you use a clay pot where you're from?
  5. Oh wow.. This is definitely something to try! Soak in unsweetened flavoured milk... Superb. You know what I think this is something I'm going to definitely try with some vanilla extract and fresh milk.
  6. Rabbit holes I can relate! *smiles, that's one reason I've disabled YouTube history. You know what happens then? YouTube doesn't suggest any videos on it's homepage. And almost never (maybe 0.00001%) use Tiktok or Snapchat. The egg coffee can be a fantastic late morning treat! But it's an art, so unless someone else is making it, the late morning treat will probably have to wait until work is done. That's why coffee shops sell convenience. Still, I've NEVER tasted a good coffee at a coffee shop. I honestly don't know how people tend to like them. And we take a lot of Arabica. Not Robusta. And when it comes to Arabica there's like whole varieties and blends etc, and the type we go for isn't like coffee shop stuff. Edit: At least not exactly like the coffee shop stuff I've tried.
  7. *smiles. I think I had a lot of flour on hand and so thought why not give it a try. - Or something like that.
  8. Yep! It is kind of a dessert honestly. I once shared the idea with a good friend of mine from somewhere in Africa, and I can still imagine his eye-brow-shooting-up tone as he looked amused and incredulous at me.
  9. Thanks for the welcome @JeanneCake, and you really must try this egg coffee. Some people mix in condensed milk as well. I'll just tell you, if you do it wrong, you'll have egg getting cooked when the hot coffee is poured in. *smiles, so just don't make it into a scrambled egg pudding. Oh I hope Starbucks doesn't go for this! This egg coffee is an art, and when a commercial giant gets a hold of it, I don't know what could happen.
  10. This muesli comes with a mix of dried fruit and nuts, depending on the brand you're going for, and the assorted mix of fruit/nut the taste changes. It's obviously not the "wrong" way to eat muesli I guess, it's so subjective; but the common way I've noticed how people have oatmeal here is with making it into a porridge. And with muesli, it's the oatmeal included in the mix, but it's just eaten raw. Maybe adding a tad of salt could enhance the flavour next time for someone who says it's like cardboard *smiles.
  11. Sometimes on busy days or when quick meals are needed, I would dunk muesli from a pack into a mug, top it up with some cold cold milk, and have it like a cereal. But then I sold the idea to someone else. And they said it tasted like cardboard. So hold on a minute, is this the wrong way to eat muesli or what?
  12. Hmm... interesting. What's a "long time" for holding heat? The regular 30-35 minute thing is not going to work I'm assuming.
  13. So I'm no professional chef. But foreign cuisines and inventive ways of cooking and "baking" would sometimes be a past time or a "study session". Much like someone who's experiment to see how high a bicycle could fly if ridden on top of mountain pile of gravel. - Study Session. Yes did that. Back to the topic. And the professional chefs can please tell me what went wrong. I wanted to bake bread on top of a stove. So I looked up the recipe I don't remember where (probably thought a simple pizza dough would suffice), and got the dough for the bread all into shape. I then took a stainless steel metal jug, and stuffed the dough right to the bottom with a lot of space on the top. I then took the jug, turned the stove on, and topped the jug upside down over the low flames. The space was there inside the jug, between the dough and and the low flame. And I let it sit for long time. And then I took it off. And it wasn't bread. So why may I ask, did that not become bread? But a sticky uncooked dough with light touch of burnt dough nearest to the fire.
  14. Hello everyone, so I'm here just to introduce myself. I'm from a little island, you can try to guess where, where the climate on the seaside is not like the mountainside. This island is so big it'll probably take you about 10 hours to travel by vehicle from point to point. Now I'm not a foodie. I don't live to eat. But I love a terrific tastes, and love trying out local cuisines when travelling. Local cuisines have uniqueness to them, and while I notice foreigners not quite liking cuisines in some lands, sometimes all it takes is to put your biased tastebuds aside and embrace the flavours like something sophisticated, and something intriguing and exciting. And there you find it tasting so beautiful all of a sudden. And that's why the Eggs with Coffee. Trust me, 1. Break an egg, and beat it up 2. Now continue beating, as you pour in a hot (not so hot) black coffee 3. Now drink. You can call it what you want, but I call it delicious. Glad to have joined this community. I love roasting. And I don't mean food here.
