Jamaican Firefly

So, this weekend's project was two-fold:

First, make homemade (non-carbonated) ginger beer:

Audrey Saunder's recipe

Then, make a Jamaican Firely, Pegu Club's version of a Dark & Stormy:

I'm including these two together, as I couldn't find them together before. Also, because this was truly an experiment that validated that cocktail obsession that my wife occasionally rolls her eyes at.

What an incredible cocktail! I'm not sure I'll ever be able to drink a "regular" Dark & Stormy again.

An aside: now that I have this great ginger beer, any other suggestions for it?

An aside: now that I have this great ginger beer, any other suggestions for it?

You can try a Slippery Slope, one of my earlier efforts in my cocktailing obsession.

A Lemon-Ginger Cosmopolitan is pretty tasty too.

2.5 oz. Lemon flavored Vodka (I like Ketel One Citron)

1 oz. ginger beer

.5 oz. triple sec

splash of fresh lime juice

splash of cranberry or pomegranate juice

Shake and strain into a chilled cocktail glass.

Marty,

Ginger Beer makes a good deglazing liquid for pork. Use it to make a pan sauce.

It is also very nice with sauteed apples.

I also use it to finish any carribean cocktail using the forumula-

_1 of sour

_2 of weak

_3 of strong

_4 of neat (ginger beer)

I hope that Audrey's Home-made ginger beer is extra spicey to warrant all that sugar syrup.

Are all the possible spirit, fresh lime, and ginger ale combinations done now?

heh, george after hitting both pegu and flatiron last weekend im almost positive that you would find the cocktails too sweet for your palate. and i think in general you could hack off at least a 1/2 ounce of simple syrup from any american recipe you found. even the Eden i had which was a gin and campari drink was sweet with just a hint of bitterness from the campari. just a matter of palate obviously. and im sure if you were sitting at any one of those bars and told them you would like your drinks a bit less sweet they would be happy to make them that way.
