My friend had someone come over to her place & do dhokla over the weekend. The lady made it from coarse sooji & added 'eno'. Is it traditionally prepared that way? I long for the soft, yellow-colored dhokla with mirchi & coriander leaves. I believe it is made with besan. I heard it is also made with channa dal.

Can anyone share their recipe for Dhokla please?

I loved the Dokhla of this guy in Karol Bagh. So the last time I was in India I went looking for it but the shop no longer existed. Someone directed me to another which 'specialised' in dokhla, where I was confronted with chutney dhokla 'sandwiches', tri colored dokhla, and dokhla made from different ingredients but the basic dokhla with the green chillies and corriander leaves that I was craving, was nowhere to be seen. What happened??

Also I have always wondered about this ENO fruit-salt bussiness in making dokhla.

How did this get mixed up in Indian cuisine? Can someone enlighten me please??

for those in the l.a region jai bharat in artesia makes the most divine dhokla. and none of this round nonsense for them :-) it is properly cubed and whatnot (kidding monica).

There is a also a paneer dhokla and a kraft cheese dhokla. :blink:

How I though of all of you over the weekend.

There was a Gujju spread at my moms. Parval ka sabji, Gujju daal, Sheera, Dhokla and Aamras and Srikhand. I had a childhood favourite of mine which is the White Khatta dhokla with Aamras (YUMMMMMSSS). I also had an interesting variation on the Yellow one that has a layer of paneer in the middle like a sandwich.

PS the MTR Dhokla mix is pretty good if you can get your hands on it. My grandmother says it works as well as making the batter from scratch.

Yes, Eno's is an old Brit antacid remedy that was widely marketed and available from any chemist, so more likely to be at hand than baking powder.

Speaking of Gujrati food (another thread). I am just dying for some dhokla. Back in Dallas I would get some of the best dhokla I've ever tasted from this wonderful woman...now being in Phoenix, I guess I'll have to make my own.

How I wish I hadn't thought about it, my mouth is literally watering. If someone could assist me, I'd be forever greatful!
