Hi, all-

 

I've gotten really into Omakase lately, and I love learning more about all aspects of sushi and its ingredients.

 

Can you recommend a resource for learning more about high-end sushi, fish, grading of things like tuna, etc?

I'm not sure of any really good english resources on this, but there are tons of japanese books that cover species, how to break them down, best way to store them, etc. Lots of good photos. Amazon japan might be a good resource.
