Hi
2 noob questions. What is Mirin exactly? I use Marukan seasoned rice vinegar for my sushi which I like. My wife is trying to make a Ramen dish and the recipe calls for Mirin.
What is the difference between my Marukan vinegar and Mirin?
Second question is about clams. I bought some "White cockle clams" to eat as Nigiri in an Asian grocery store. The box says ready to eat. Are they cooked? (I will eat as is but just wondering if I am eating a raw clam).
Thanks a lot

Thanks for all the answers so far. We are doing it this week-end along with some nigiri sushi.

The recipe is on the package: "Cooking time about 4 minutes."
The dish I meant, not how to cook the noodles.

I fried it in a pan with nothing. It worked and tasted like at the sushi place.

Do I just throw it in the frying pan with nothing? Or put some oil?
Sorry for the dumb question 🙄

I believe they fry the panko briefly to take some of the “raw” flavor off, but not so long as to brown it. You might just want to try toasting some briefly in a sautee pan?
That sounds great, I m trying tonight.
thxs so much

Interesting link and website, I created an account there.
I opened the package and tasted it. It has no taste but has that consistency I get when I eat crunch rolls in restaurants. I m making sushi tonight, i will try a roll with it.
I just can't deal with making my own crunch, it's just me and my wife eating sushi and I make them like twice a month.
Thxs for sharing
