  1. Beard Papa Sweets does sell some mango inspired desserts in addition to creampuffs, but the vast majority of their business is with the latter.
  2. great report! I don't have a wrong fuel story, but I can relate to going to a restaurant in Italy, thinking I had a confirmed reservation, only to discover that the restaurant was closed and the restauranteurs were in NYC.

    Please continue to post your experience - you misunderstood nothing when you posted initially. iIjust wish to know if there are particular reasons why one shape may be preferable to another for particular fillings. It is precisely your experience that I would like to learn from. Post on!
  5. Seliano is in Paestum, which is a bit of a hike from Don Alfonso. It is better as a destination than as a base. It is in the center of buffala country with the best mozzarelle from unpasteurized milk, so it has particular interest as a gastronomic source of special products. In addition, the Baronessa Cecilia Baratta and her family are gems. While it is not a place to learn haute cuisine, it is probably as good a place as any for getting a handle on Campanian country fare. The ingredients and technique are stellar.

    Vesnuccia, Welcome to eGullet! My experience in Sicily and New York is round with ragu. In fact, I don't have much experience with other shapes at all. Is there a particular reason why you make the suggestions you do?

  12. I saw the yoghurt at Sheldon's Farm Market in Shushan. I didn't see the mozzarella, but they may have been out.
  13. Sorry we missed you Mark. Star Hill Dairy is located in Woodstock, VT. i order directly from them. I would like to see Putnam Market carry their products, although I don't believe they currently do.
  14. By virtue of the filled tables, I would say that plenty of New Yorkers are ready for four hour dinners, so long as the food, service and ambience are wonderful. Such is the case with Per Se.

    The problem is they were fragile even before the frying. My previous experience with them is that they have not usually been that fragile. They did taste good. I feel good about that, but they should have been easier to handle.
  16. No grad, but my wife and I have taken the day courses there, at which they provide the aprons.

    Excellent! One thing about risotto and Sicily. While I do not know this for fact, it is plausible that risotto has been around Sicily for a long time, especially in the more urban areas. Sicily is the original "melting pot" with culinary influences longstanding from all over. This is what makes the cuisine relatively unique. Sicilian cuisine has a lot of arab, french, spanish as well as italian influence. I may have to try making them again sooner rather than later with some variations.

  19. My (then 12yo) son and I had sea urchin like this in Sicily that really made us understand what they are all about.

    Ana Tasca Lanza is Sicilian, yet she is the one making it with a risotto. Of course she is quite a bit more worldly and sophisticated than the average Sicilian. They were the best arancine I've ever had when I had them at her place. There are clearly more than one way to skin a cat or make arancine. Mine should have been more resilient than they were. I'm still not sure why, although I have an idea of some things to try next time.
  22. I accept that there is hype to Frog hollow and that they are very expensive. My quest is for outstanding stone fruit grown in a sustainable fashion that I can have shipped directly to me in new York. Who out there is better for this purpose than frog Hollow? I would love to give them a try. It doesn't have to be from California, either.
  23. The pig is a Gloucester Old Spot. It's mate (not shown) is a Large Black.
  24. I believe the fine quality of the finished gnocchi had everything to do with the skilled way the cheese was added at the end
