Today I made @liuzhous "found on the internet" mango relish. I used two homegrown birds eye chillies and three mangoes plus other ingredients as indicatated in the recipe which I can't link because I naturally repel technology. The stray relish is delicious. I can't wait to try it with an aged cheddar.

A jar of mango chutney. It's simply chopped mangoes, apple cider vinegar, caster sugar and diced long red chillies. I would have made more, not for lack of mangoes, rather lack of sugar and vinegar. Oh well. Sampled in a sandwich snack with shaved ham.

Chettinad style chicken curry, with cabbage masala, roti breads and mango chutney. Followed by mango with sticky rice.

Surprise, surprise mango salad. Served with a New York cut sirloin, flat chips (again) and corn, all cooked on the barbie.

The photo of last nights dinner was so awful I refuse to post it. The dinner was okay, marinated chicken wings with steamed rice and Kylie Kwongs lettuce and spinach salad. He who must be fed came home with these, (love them corporate gifts) they're ready to eat now. There will be mango salad, mango chutney and mango with ice cream. Any other ideas ?

Sort of shakshuka, the egg yolk was a bit firm, but otherwise all good. This was a crafty use of leftovers, I had the potato, silverbeet, cheddar and ricotta filling from Sundays pasties, cooked with onions, garlic and tomatoes. Served with a beef, black pepper and parsley snag or two.

My best is a poached egg on toast, featuring semi runny yolk and just set white. Easily achieved with gently simmering water plus a splash of vinegar. Worst, over easy cooked for too long. Rubbery eggs should be illegal

Repurposed dinner. Yorkshire puddings heated in the oven from cold, gravy heated in the MW, cold roast beef added, and then piled on the yorkie, followed by a sinus clearing smear of hot english mustard.

Roast beef with Yorkshire puddings, roast potatoes, pumpkin and parsnips, buttery garlic silverbeet and gravy. Restored my faith in roast beef this did.

Sure @Wayne. 2 rashers of bacon diced and fried til crispy, then cooled. Mix 2.5 cups of self raising flour, 1 cup grated cheddar, 1 tsp cayenne, grind of black pepper, grind of salt, 2 tbs of snipped garlic chives, and the bacon. Add 3 beaten eggs, 1 cup of milk, and 50 g of melted butter. Bake in a 180 C oven for about 30 minutes. Note these are Australian standard measurements, a cup is 250 ml, Tbs is 20 ml.

Here's some muffins with bacon, aged cheddar, a generous amount of cayenne, freshly ground Kampot pepper and snipped garlic chives. Yes, one is missing, strictly for quality control purposes.

We haven't had a Burmese curry in a while, so that was dinner. Chicken with potatoes, spinach and tomato salad, steamed rice and pappadams.
