  1. i was not going to post on this subject because im not a critic, its not my job,all i can say is that i had a lovely evening at brunoise,the food was outstanding ,michel ross is a very solid cuisinier,IL CUISINE,and zack has a wicked dining room personality and a very casual chap,a beautiful clientele,in a beautiful restaurant altogether perfect....a very good restaurant with a great menu and wine list.......lots of love from me .........................
  2. in montreal the fish comes in on monday,teusday evening and thursday evening,monday for all the florida fish,tuna, sword ,mahi ,pompano ,tile,grouper,american red snapper,teusday the fish arrives from fulton fish in nyc,and thursday the same,all other fish or all your standard atlantic seaboard fish and sea food,all maritime fish and seafood comes to montreal whenever by midland transport,oysters ,halibut ,fundysalmon,mackerel,clams.......

  4. i dont know where you got your info david ,but the cairranne domaine richaud les bresscades that we serve at rosalie cost me 41.75 a bottle......the second bottling they make is villages cairrane and is 31.70 and i dont carry this product..........i do a 2.5 mark up and a 2.8 mark up for three days during grand prix...this is cheap for downtown as compared to my neighbors and competitors,my operation costs are monsterous at globe and rosalie for such a weekend,i.e. extra staff ,rentals furniture ,terrasse cost ,terrasse permit for globe ,plates, glasses ,breakage, and so on and so on,in theory we could not be aggressive and do our regular buisness,but the demand is insane globe has been full for months and rosalie has only been open for four months and did huge numbers,we just try to feed all the people that want to eat,the profits of such a weekend are relativitaley dismall as opposed to our consistent 51 week a year regular local buisness......my best customers get out off town on grand prix ,and wish us all a good weekend....... ,mr russel if you come back,please ask for me i always have the amazin liquidation bin in the cellar consisting of end of inventory,i make prices slightly above cost.........

  6. im sorry lesley ,my fries are way better.....i was there friday ,and im sorry but i never even got my appetizers,we were sitting there and then the mains came out ,i never make a fuss,we ate them,then i left,oh yeah the best part was they charged me for my apps my mains and two glasses of wine when i only had one...........i never got my apps nor did anyone even ask or actually know or care..

  9. thank you lesley and stellio,i would never give up but when you think it cant get harder ,it gets twice as hard,im dreaming of a night out ,like you dont understand....i want to eat 12 courses at les chevres so badly ,i want to go to brunoise badly,i want to go to magnan for lobster fest,i want to go look at med grill,i want to go to holder,i want to drink tonnes of wine and sleep in ......i want to go to christophe.....it seems like montreal is a different place so much has happened since i started work at rosalie,its like a new city,i want to go to anise too...........im comin soon............
  10. thank you for your comments,ihave to admit i am a bit overwhelmed these days,i have a 260 seat restaurant that has been written up glowingly in all papers but la presse,i got a few knocks in that one ,im generally full for lunch and doing brisk full menu terrase all afternoon,and then i get slammed and turn the dining room twice at night,oh yeah and i still oversee globe restaurant,i havent had a day off in four mounths and my g freind is 8 months pregnant ,i make myself available to all customers and will continue to do so, the restaurant is 4 months old and i have alot of work to do, still thank you for all your support....i stress it is always a pleasure to meet e gulletters and please do not or never hesitate to contact me about your visit,it is apleasure for me to take care of you,and make sure eveything is perfect....i would love to have a chance at making you right" grill it.".........please contact me or leave a message at 392 1970.thank you..............david mcmillan

  15. i guess hate is a strong word, i used to read wine spec and i found it restraining,the describers are weird and the wine lingo a bit tacky,i think the point thing is a bit bizarre,and marvin schanken is a weenie ,i hate the cult cab drinkin,cigar afficianado stockbroker steakhouse types they market too,its not me ,i love the parker wine buyers guide,its magnificent,bettane et dessauve guide is also incredible,revue des vins de france,is also good ,i love winebuisness.com and if you can find it wineX is hilarious wine magazine,the web site is alright too,i also check out the news part of the winespec website updated every wednesday,there you go porkpa..............

  18. i know alot of california winemakers that only swear by the euro juice,the natural wine thing by rezin and cube is comendable but just too weird for me,i did taste alot of it before i formed my opinion and its just not to my taste and not to my customers taste,they are usually private imports,and if customers turn them back you have to take the pill cause the saq wont,the wines are usually to sweet or to cloudy or too light or too tart or too stanky or not stanky enough , your right ,the monkland has good juice,and i cant beleive we forgot alex melies,i forgot too my first born globe doesnt do so badly either,and tavern westmount...

  21. moneybags?if you only new,i have no money....ive heard the french wine thing several times now and have even had 1 cancellation over it ,i couldnt help laughing out loud ,ive had a few customers complain about the all french wine list only ,i magine because they couldnt find any" point de repere"the grape varietals on new world wines are for the most part stated on the label,i.e rosemount shiraz,mondavi zin,niagara chard,pinot grigio bella vita,and so on and so on,the problem in north america with a french wine list will be ,that apart from pays doc wines wich are all most new world and do state varietal types on labels ,that a chardonnay drinker does not know that meaursault,macon ,chablis s of all denominations ,and so on are all chards,and a pinot noir drinker will not know that gevrey chambertin or nuits st georges is pinot,it gets even weirder in bordeaux where wines are mostly cab ,and some are mostly merlot,........then what about weirder appelations like limoux,or saumur, vouvray the south of france is confusing for experts ,one guy does syrah the other grenache ,the other mourvedre,and the fourty all three, so i understand the problems with the list but,i love them all,after being in charge of the wine program at globe for 6 years,doing a very international wine list,i have learned more at rosalie in three months,because you have to hunt for good producers ...i could go on for hours on this subject, but i will finish with this....i recently went on a little trip to toronto ,nyc,and boston,i noticed that in all the restaurants i ate in were all clearly different,but there wine lists were all the same,they all had mondavi,beringer ,antinori,rosemount,penfolds,or wine spec top 100 wines,and all the other hot wines of the week,its a shame a bit,that we all write the same list,sommeliers are not to creative,there even sheepish,why not an all bc list or all california or all burgundy,i hope les chevres has the best sancerre list in the city,if we are to be writting excitng menus we should push for exciting lists,where are your favorite lists people,lexpress doesnt count(best list in the city in my opinion)

  23. its been my dream for years to have total non smoking in restaurants,i comend all restaurants who who will go this route,in our case its a bit harder cause of the hip crowd,(whatever)we still maintain 50%smoking reservations at globe ,rosalie is less at about 30%,it would take a law to make it easier for us to avoid confrontations,ferreira is non smoking and caprice as well,i went to a bar in yaletown in vancouver where there were 400 people all non smokin ,it was bizzare,but icame home and i smelled great ,l like a goat.

  25. thats easy to say young bro......so do it tough guy!!!!,criticism is easy its very hard to raise money for projects and then even harder to staff them,and im not talkin about gettin 30 grand together to buy a restaurant with 3 buddies,im talkin2 million rosalie and a 33million hotel godin,you have the banks behind you and fiscalists and media checkin everythin,and so on so on,these kinds of projects take years to put together and they are always fragile,investors want the best ,furniture designers,concierges ,chefs ,and maids and plumbers and so on and so on,im proud the pourcels might come to montreal ,or ducasse if thats true,it wuold be cool to have a nobu,and yes i agree it would also be cool to have more local talent open solid restaurants of north american caliber..i can only think of a couple,maybe stelio and patrice at les chevres,or a new laprise project...im sendin alot of positive energy to guru and patrice.....i feel something special brewin there...........ciao
