  1. with Canadian butter which is packaged in one HUGE brick (as compared to US butter which is in 4 sticks and is more easily managed.  Why this difference?  Well, I don't know, eh?)

    Lactancia unsalted butter is available in a box of 4 sticks. This is usually what I buy. Easier to work with for sure. Available at Longo's and Loblaws.

  2. Welcome Ted. Friends of ours got us interested in southern cuisine too. We have a couple of Paul's cookbooks and everything we have made from them so far have been fabulous.

    What are some of your favourite dishes?

    I guess Chicken & Andouille Gumbo, Jambalaya, Shtimp Etouffe would be a few of my favourites, Andouille and Tasso are almost impossible to get in Ontario though so I started making my own. I'm also a big Mario Batai fans so I like quite a few of his dishes.

  3. I just joined today but as a cookbook junkie I though I would put in my 2 cents.

     

    For basic cooking techniques and recipes the Joy of Cooking is still my go to cookbook. I'm sure millions have learned to cook from these pages. Jamie Oliver's books are pretty good but alot of the ingredients are hard to find or to figure out what they are.

     

    I have found some of Emeril's books to be quite good, but again ingredients can sometimes be a problem depending on where you are. I'm in Canada so a lot of the Cajun stuff is not available here,

     

    But most importantly have fun with it.

  4. My nanme is Ted and I am a graduate of Humber College Rexdale Campus Culinary program. I love Cajun/Creole, French and Italian cuiseine. I no longer work in the industru (retired) but still llve to cook and share what little knowledge I have with others. Looking forward to contributing here.
