It is a beautiful set of islands. It was a family reunion trip of sorts. Stayed at a condo with a kitchen-- it had horrible cooking supplies though. I fried up the fish in the thinnest teflon coated pan I've ever seen. The teflon was coming off and the electric burner was impossible to control. Smoke everywhere. We stayed near Providenciales where you would take a $20 each way 5-min cab ride to the TREMENDOUSLY expensive grocery store. Bag of Doritos? $5. Six pack of lousy beer? $12 The fishing trip included a couple of hours of spectacular snorkeling. If I ever go back, I think I'll get certified to dive. The guy who was cleaning the fish shared a recipe with me for the triggerfish. Basically it was just dredging the fillets in flour, pan fry, remove the fish and drain the pan. Then add garlic, tomato paste, and whatever liquid you want-- I think I used white wine. Simple and good enough (given the lack of available ingredients) so we gave it a try.

I can't recall what we were using. Hmmm... I think it might have been just chunks of spot or something. Yeah those are triggerfish. We ate those too along with some strawberry grouper. You can see how blue-green the flesh of the parrotfish is under his hand. That was after he scaled it. The triggerfish have really tough skin. He cleaned those by cutting a little at the tail and then wrapping the skin around a screwdriver and twisting until it peeled away. I believe you can buy "leather" products made out of that stuff down there.

I caught parrot fish down in the Turks and Caicos with a rod and reel. Cooked them up too. It was disconcerting pan frying blue green fish meat. Tasted pretty good though. Edit: I must point out that they were caught in broad daylight, so obviously they were inferior to the night caught variety. I'd post pictures if I could figure out how on this site.

I believe that in Quechua, the language of Tawantinsuyu, which colonialists like you and I know as the Inca empire, this dish was referred to as a "hooker." Wow. And how do you say "onion ring" in Quechua? Onion rings were known as bimbos. By some great cosmic coincidence, all foodstuffs in the language Quechua were referred to by names that sound remarkably like derogatory terms for women in English.

As a half Aztec and half Atlantisean, I can say with some authority, that stromatolites stuffed with poached prokaryotes are a fine party dish.

They've attended at least one that I know of. My bro and his wife had their rehearsal dinner in Raleigh with a big ol pig on the smoker. This, despite the fact that when I was married some years earlier, someone down the street was having a pig pickin and left the pig's head on the hood of my car which my new wife and I found as we were ready to drive away. We divorced a couple of years later. I think it was that damn pig-- either the ex or the actual pig. Anyway, I don't think I could talk the grandfolks into coming down. Surely we could reschedule? Just kiddin... I'll send you my address to FedEx some pickins... I hope everyone has a hell of a time, and I know your pig will be the mack daddy shit bomb (that's a good thing by the way).

Is there a more natural combination. Actually, come to think of it, "hookers" would be a good name for some specialty dish. I can see the thread on egullet now, "Have you tried the hookers at Al Dente's Bistro?"

Lowbrow? Count me in. My budget needs a break occasionally. I'm still anticipating another visit to RFD, or we could get even more lowbrow than that (see the dive bar thread). Sietsema always mentions Stoney's. I used to live next door to there. Chili and onion rings in a dive atomsphere. Its not the same, though, since they moved the hookers out of the hood. We could throw in a few hookers too!

Perhaps we should have a "flash mob". Go to some dive and loudly praise the fois gras even though it's really nachos... send our compliments to the chef on the mozzarella sticks... reflect solemnly and verbosely on the sublime bud light draft... Just kiddin, I DO think something funky would be fun. Tune Inn? Bob and Edith's? Some little neighborhood joint you find especially endearing (Southside 815 in Old Town would get my vote)? Some good Pho (perhaps we should save that for a coldweather night)? The aforementioned great burger? A picnic before it gets too chilly? Anything goes, as far as I'm concerned...

Well, the question arose on Saturday night-- where next? Indique was wonderful. If I could have a meal like that with many of my fellow foodies every 4 to 6 weeks or so, that'd be great. But I think the "semi-regular spontaneous off-line event" with a few of my fellow foodies would be pretty hip too. Lets keep this thread alive. If, like me, you sometimes just head to "neighborhood xyz" just for the hell of it and something to eat for dinner throw a post on here-- if you're up for a little company. Something upscale? A little bar to bar appetizer crawl? Something decidedly lowbrow? A particular cuisine? Just a damn good burger? A quest for the best Peking Duck? Will an outta town egulleteer be in town? Whaddaya think?
