Alert! "White wine" update. It's been over 2 weeks and it has a ways to go. I plan to pick up some isinglass to help the process along.

Amazon.ca has a sale price of the Anova Bluetooth version of $132.99 down from $199. Can someone tell me what the minimum depth of a pan would be that I could use with the Anova? I have the Polyscience Professional but wouldn't mind a smaller circulator that I could use for cooking sous vide smaller items like a piece of fish. When I use my current equipment the smallest pot I can use is a Stockpot. By the way, Amazon.com has it listed at $110.66.

@Okanagancook Here is a picture of a couple. They are the 1 1/2 ounce size. I have had others as well - the lamb one is great when making a lamb stew or the gravy for lamb shanks. You can order directly from them. Sorry, the picture doesn't want to go right side up.

The reverse is true of the book Hello, My Name is Ice Cream. I got this book for Christmas and made my first recipe from it a couple of days ago. The weight measures were off. In the intro it stated that 2 tablespoons of milk was equal to 30 grams. The recipes state that 2 cups of milk is 450 grams, not so if 2 T= 30 gms. The recipe called for 50 gm. of glucose or 1/4 cup of an equal amount of corn syrup. I was using corn syrup. That 1/4 cup weighed 87 grams. The weight of the cream was different than stated. I have no idea who came up with the weights but they, the authors, editors and the publishers should be embarassed. I finally decided to use all volume measurements.

I just checked and well.ca has 6 out of the 8 Shirataki noodles in stock. You have me wondering if I should make sure I am well stocked at all times in case of shortages. We use maybe 2 packages a week. 3 this week as we gobbled gobbled last Monday night.

12 grain bread, started with poolish and a soaker. Had some for lunch today for grilled cheese sandwiches which had a blend of two cheeses - an Irish one called Claddagh Bo and a local one, Těte à Papineau. The inside of the sandwich had been spread with some caramelized onions. Good stuff.

What is the brand of noodles you are using? We are now using only Zeroodles, with added oat bran. We use the angel hair, spaghetti,, fettuccini and rice. After rinsing, i spread them out thinly on a linen tea cloth (don't use terry cloth!) Cover them with paper towels and roll the works up into a cylinder. Takes all the excess moisture out of them. They fill you up and a package of 400 gm. Contains only 112 calories.

I know. I like cucumber sliced fairly thinly marinated in nothing more than seasoned rice vinegar. When I opened the fridge to get the cilantro I saw the cucumber and said to myself, "dang, you could gave had marinated cucumber on the side"!

Wings tonight. Just wings although when I looked at the plate I decided we needed a green vegetable so I sprinkled some cilantro on them. Flats for me, drumettes for him.
