  1. hi betsy how are ya doing. Betsy has a great team and i know some of the cooks there. Make sure to give her a call i think they could do a great job.
  2. Like i said i dont go to those places. My parents have always believed that there a ripoff and not very good. So we dont eat out at them very often at all. SO i cant really recomend one. I do rememebr liking siebres fejioada(sp) it was full of tripe, sausage, pigs ear and all the things i love. It was a special that day and my parents and i just stopped in for a drink an da quick bite at the bar after shopping. We all got the same thing and as a looked around at the chops in there and the americans in there. Only the chops were eating the stew. As for alfama you have raised my interest. My wife and i have just moved to the city and i would be really interested in eating there one day. Maybe sometime in two weeks, after mothers day. I will report on it for sure.
  3. Let me tell you something about the "portugese" restaurants in newark.........most of them suck and they are as far from real portugese food as you can get. Being a chop first generation speaking the language and visiting the country every two years or so i think i can come as close as you can get to being a pro on the food. So please stop nitpicking on what menton is sating because they are 100% correct on what they are sayign by being touristy. Yeah they have a couple of authentic dishes but thats as far as they go.
  4. fresh softshells are available rigth now. We are gettign them in the restaurant fresh and preety large at a wopping 64 bucks a dozen.
  5. Ok i have a task for you new orleaners. My inlaws are going out to the city and want to know where to go. Price isn't really an issue but id like to know people top choice for fine dining, casual dining, and the cheap eats. They are there for 4 days so they have time to eat at a couple of places so please dont be shy. Thanks

  7. are all these harolds new york style deli owned by the same guy? i have one by me under the ramada inn in edison. I love that place. but if your in the mood for a good sandwhich check out JP Deli in rosell park. The localls love it and the subs are the exact perportions they should be. The right amound of bread to meat to fixings ratio. Some dont realize how truly important that really is. To much meat no good to little meat no good. Its an art i tell you.
  8. What about best casual italian central jersey. The macaroni grill!!!!!!!!!!!!!! The Romano Brothers must be proud. Dont get me wrong i like the mac grill but i ahve to think that there is a better little italian place out there then them.
  9. Never mind it was russian not germans my time period was a little off. but the movie is called Chef in Love. Its a great one and everyone needs to see it.
  10. Does anyone remember the movie about a french chef and his wife. It has great scenes and it takes place during the war. the german soldier is in love with the chefs wife and everything goes a little crazy but in the end they stay together. There was a good scene where the chef is eating ina small restauarant and he has to guess what kind of liver is in the dish. The owner tells him he will never guess but he guessed bear and it was right. I just cant remember the name of it. A new one is being martha or something martha. Its german its very good. I know some people may think its a stretch but Pulp fiction is actually a serious food mover. there is almost 300 food references to food in the movie.
  11. Oh yeah im sure i will watch it too dont get me wrong. The scenes from the next show look preety interesting actually. A friend of mine worked for him at union pacific. He said he gets a little crazy in the kitchen and yells and stuff. Its goign to be preety cool to maybe actually show [people what us cooks go through at times. So im interested in seeing tha.t

  14. Im going to go out on a limb and say it was one of the most unrealistick, staged, and plain and simply stupidest show ive seen up to date. It was basically making a mockery of the people who actuall do all the work to open a restaurant. Has anyone eaten there yet by the way i haven't had time to look through the whole thread yet but i haven't seen anything under the food threads.

  18. I love that dam bread!!!!!!! I eat at least 8 when i go i think. I just keep asking for it becaus ethey are so good and that butter is great. I beleive the special you had was Escolar not escobar. Its a hawaiian(sp) fish. It kind of looks like a giant porgy. Its flesh ranges from pure white to pinkish red depending on the season and what part of the fish that portion comes from. Can you describe the escolar dish a little better for me. I wonder if thats the one My little lady put together. She did a special with a corn soup as the base and there was something sauted in there i just forget what it was. So please describe it a little more. The frog has some of the best specials around. There not the kind of place that runs specials to get rid of a product that laying around in the kitchen. They order fresh ingredients everyday just for there specials. Its a great thing to see a place take prid elike this in what they do.
  19. We have a vegetarian menu at the restaurant. Its a three course menu plus dessert i think. Your mother should enjoy it.

  22. Yeah but thats the game. First come or not that doesn't really mean shit. 15 minute sisn't going to get anyone angry because its acceptable. If the patrons ask why didn't we get this table first just tell them we were expecting a 4 top but we decided to give you the table instead. Thats the game.

  24. i kind of see both sides of the story but i will say this. If it is a first come first serve restaurant then i think i would have made you wait 15 minutes for a table to open. Its kind of liek playing craps. Maybe a two top will open and you can have that table but if it doesn't then i would give you the four top after 15 minutes. I also dont feel that 15 minute sis long to wait for a table.
  25. I can tell ya why its for sale. Its needs a shit load of work to it. The struture of that place sucks everything is warped and getting very very old. Its goign to cost way to much money to renivate everything which it needs. plus business isn't that great especially after the pharmasutical(sp) parties got taken away. These partys were put ona budget. They can only spend up to $100 per person which includes food wine tax tip. I think the ryland said no to ther proposal because it wasn't enough to cover their costs. Well that was a huge part of the business especially for lunch. This is what gave birth to that stupid bistro idea. So when you cant make enough money to make it worth your while its time to sell. Its not for any other reasons besides that. Shelton is great chef and i have nothing but respect for the man. Its sad to see this happening but hopefully he will go somewhere else and open a new place that doesn't need so much work.
