  1. use a food processor and put it through a fine strainer, will do the same as a food mill but i have had good experience doing this at work
  2. maybe take a well greased ring mold and something inside it the size of the lip you want and bake with those inside, should give a nice straight side for them
  3. i do dessert buffets in a sense each week for a brunch every sunday, with enough prep you can do any number but 1000 is double what i and the people i work with have done, 200 should be easy enough
  4. i've noticed that at the restaurant i work at things such as various cheesecakes, carrot cakes are very popular, and of course chocolate cakes
  5. i have made marshmallow in 2 ways, 1 as a fluff like method and another in a more solid form
