And you should have been at Dom Perignon night at Toque! Normand outdid himself, and the Chanpagne was beautiful beyond words. A major wow night in the city. I'll post the menu as soon as I have a minute. The food was sublime -- Toque! at its best.

Hi Tom, Welcome to eGullet. Could you say a few words about the importance of anonymity in this job. The topic has been widely discussed here. Some pretty heavy hitters (OK Shaw and Steve Klc) said they don't think it matters. I think it's essential. Care to add your two cents? Also, have you ever resorted to a disguise? Any funny stories to share?

Jinmyo you are so right about fruit. I barely eat fruit anymore and I used to love it. the fruit we get here in Canada just has no taste. I buy it, but it just sits in the basket and rots. Heavy sigh...

Green peppers are not meant for human consumption. They are completely undigestible.

Lobster is really the worst offender, it just looks so bloody evil. But crab, yes, gross, and the legs, yes, also gross. But all that stuff out of the shell is fine by me. Shrimps in the shell don't bother me. In fact when they are really fresh, I eat the shell along with the flesh. Deep-fried soft shell crabs are also great. I guess the thicker the shell, the more turned off I am to the experience.

I'm not into any fish eggs. I'll eat them but I can pass on them in a minute. I recently reviewed a Russian restaurant and when I went back there for a shot of vodka they brought me a free mound of osetra on the house. I ate it, but it was totally wasted on me. I can’t help feeling that with the present shortage of caviar, I can find better things to indulge my gourmet whims. I also will not eat lobster in the shell. It grosses me out no end. Take it out of the shell and I'm fine with it, but cracking the bug to bits and sucking out the meat is disgusting. I keep thinking it's a big cockroach -- which it is.

I've had a lot of those kind of meals. Even some at Rosalie. Even some at Toqué!

Savannah is a great restaurant. I think they've done something interesting with the Cajun/ Southern/ Low Country fusion thing. The room is beautiful. BUT I never gave it a gushing review. After two visits, I had some problems with the food. Every time I went to Rosalie it was for reviewing purposes. I go to a restaurant as often as I have to before I "get" it. I had a lot of food at Pronto. I felt I had a grasp on the chef's cuisine. It's Canadian/Italian food, pretty easy stuff to evaluate. I saw no need to go back, and frankly after the way I was treated the first time, I didn't want to go back. Steve, I don't only go once. I go as often as I feel I have to to write a fair review of the place, which could certainly be once, or more. At Rosalie, the menu kept changing so I had to go back. For this week's review of Holder, I went once for dinner with three people and once for lunch with two. We managed to eat quite a lot of food on the menu. For my next review, I'll only be going once. They have a small menu, we plowed through most of it, and I pretty much blew my budget after one -- long -- visit.

Wait a minute eat2much, I didn't give Savannah a glowing review. 2 1/2 stars ain't a glowing review in my books. Rosalie got a glowing review, and I went five times before reviewing the place. BUT I've heard that since the review the restaurant's been packed, and I'll bet the atmosphere has changed tremondously -- for better or worse. I just call them like I see them at the time of the review. What happens after that is entirely in the hands of the restaurant.

After Thanksgiving dinner, I used to drink all the leftover warm gravy straight from the pitcher. I've cut down on my turkey gravy habit since. But boy, did my mother ever make great gravy.

Wait a minute...I swear I saw it on the list last night. Am I having Janasse hallucinations? Chopper please tell me I'm not losing my marbles. There are plenty of other wines on there I enjoy (equally cool, Domaine de la Terre Rouge's Enigma,). Chopper did you guys work with Rezin? David, welcome to the Montreal board . If you need dining advice for Grand Prix weekend you've come to the right place. But maybe you've already made your reservations -- hope so, they can be pretty tough to garner at the last minute.

Wow Ellen, what a treat! Beautiful pictures. The food looks great. The salmon...the lamb... too bad about the desserts. Was there any cheese from Quebec? I just love West. If I lived in Vancouver, I'd hang out there all the time. Thanks.

A La Cornue Palais 160 with the Chateau Kitchen counters and baskets to match (see www.lacornue.com). And, of course, the whole line of "culinary tools." Also, a tap behind the stove to fill pots. Very smart move that extra tap.

I have it on pretty good authority that Robuchon isn't doing any of the cooking. I guess he's at the age where he just points a finger and shouts out orders.

Wait, is Beauchemin now doing the food for the actuel section or taking over the restaurant reviews on Fridays? I just read that salt piece. I would not agree about salting a slice of apple or pear pie.
