A passionate Neapolitan "worldwide traveller" that has put the knowledge acquired as a teen-ager in Pizza Napoletana making and the later studies in breadmaking science and technology to good use. Consulted several restaurants around the world on Pizza Napoletana and Neapolitan cuisine, including the renowned Franco Manca in London, where I have supplied the starter, created the "recipe" and production methodology and trained the team on the natural starter approach to Pizza Napoletana making.

Co-founder of Forno Napoletano LTD with one of only two families of traditional Pizza Napoletana oven builders, with the aim of distributing around the world the authentic Neapolitan pizza oven, a vital element for successfully producing Pizza Napoletana as demonstrated again at Franco Manca. He is also a self thought chef, expert in Neapolitan cuisine as well “molecular cuisine” .
