  1. you want to rent an apartment. the leasing office tells you there is only 12 months`( 1 type) renting available. your lease ends the exact same day next year. say it january 1st you move in the apartment , you must leave the apartment on the same day next year. can you move out january 2nd ? yes you can (if you havent done anypacking before , which points the `becoming late to a reservation at a restaurant), but you have to pay the penalty fee of `being late` $500. unfortunately , there is no restaurant I know that charges you a penalty if you were told to leave in a time frame and you are late. but leasing offices can do that, not the restaurants. my point is every business establishments have their own rules. you dont like the rules or they are not suitable for you , you can go some other place. if you dont want to pay $30,000 for a mercedes , you can go to honda and pay $25,000 for a different model. Don`t like the rules ? go somewhere else. You don`t like the rules but still go ? complaining wont make any sense. Ray`s has some rules , and Ray`s rules.

  3. I just dont see any point to defend Mr Donna here. He is not a bad chef (losing a game doesnt make anyone bad or untalented)and everyone knows it. Iron Chef is a tv show, every chef ,either a master of the kitchen stadium or not , has 1 hour to cook. Was Roberto Donna able to manage that time ? Obviously he wasnt. He couldnt plate even 3 dishes. Did he not know anything about the show or 1 hour time frame ? I dont believe that , Im sure he received enough info about the show before his performance. Ming Tsai never performed on the show either , but he kicked Bobby Flays ass. What makes him different than others ? Bobby Flay lost his first game to Morimoto , but he won the rematch back in Japan. That was his second time on the show. But he won. You love Roberto Donna very much , you think his food is the best but whats the truth ? He didnt do any good on the show and Morimoto ruled.

  7. PC at which? BF9 or New Heights? I heard that BF9's new chef Brian Wolken (only for the last 4/5 months) is leaving to open up his own place. Interviews are underway for a new Exec. ← At B9 I think her name is Rita and she was the pastry chef of the year in `03.

  9. Kent Bakke, a well-known figure in American espresso because his company, ESI, 's the (exclusive) importer of La Marzocco machines, shared a story once (this is 2nd hand). He was having dinner in Italy and ordered an espresso at the end of the meal. His Italian friend looked at him like he was crazy. "What are you doing ordering an espresso in a restaurant!!?" he said. "If you want an espresso, we'll go to an espresso bar! But you don't order coffee in a restaurant!" ← Maybe this Italian friend had some issues with the espresso at the restaurants , just kidding . I believe Italian espresso and coffee , they both well qualify to be world class. Lavazza from Italy ,(to give an easy example) is selling espresso and coffee at grocery stores which I think they are reallly smooth and rich and they have very good taste as well. I also know some restaurants in DC using Lavazza. I just dont think Japan , Scandinavian countries and America are the only countries making/serving the best coffee. I`ve enjoyed very good coffee in both Italy and France. Of course I cant skip Turkish coffee

  12. A bar seat is a must in front of Koji Terano. You should watch his art. flounder carpaccio is excellent with truffle oil. I also like the tuna 6 ways so you can try different styles of tuna.
  13. I'm curious about who grants permission to serve Fugu. And how quickly does it poison you? How many deaths/poisonings are attributed to poorly served Fugu? Or is Fugu's deadliness just an urban legend? ← according to a program on foodnetwork , that fish can kill someone just under 5 minutes , so you wont be able to catch the ambulance , and in Japan there are still 10 -12 people passing away every year because of incorrect prepaired fugu. Also the poisoned parts must be locked in a special container and send back to the demolition zone .

I can`t find a simple answer to your question , but to make it short Im gonna say `passion` . That is the key behind Charlie Trotter ,Thomas Keller, Michel Richard and some others. That is the key to the success . When we find the right people we can open the best restaurant together . of course we are going to need a big , fat investor
  23. Buying a plane ticket , staying a night in Chicago and seeing what Charlie Trotter`s can do `in service` will give you the best service experience in United States . You will come back speechless , thats my opinion .
