  1. Iam going to take a fun class but it is what I do for a living. Iam a chef in Hoboken NJ. I will rent a car when I get there.
  2. I am going to cook in Viareggio in Nov and I will be going all around the area. I want to eat in small country placees. Help me out plaese.
  3. What is you point!!!!! You think you can find penne vodka in Italy. Well the people think that is the food of Italy. So no shit there is not any French dressing in France. The point is people think Itl-Am is the food of Italy. I know this becouse it what I do. Thank you Mark
  4. Not when you are eatting Italain in the US. It is the most basterized food. So in the fall I will do boar,cheastnuts,t-bone,like tuscany-piedmonte-becouse the weather is the same and same thing growing both places.
  5. Lreda, What is real Italian!!! It is simple fresh ingredients that is grown local and seasonal. It is that simple. If you what more come see me at The Jefferson.

  12. You people who are from "NYC" make me laugh becouce your really from mid america eating Sonic. So come off your high horse. Some of the best NJ restaurants the chefs have worked in NYC or Europe. Ok I will come off my soap box and say if you speak to most chefs in the area they started at The Ryland Inn. Craig is the person that started most of the chefs out.

    Went to Alto last night. It was great. The tasteing menu with wine. The service was great. Seven courses and there was not a bad one. It was pricey but so is everthing at that level and that area. Nice job
  18. As I have been cycling Hunterdon County and there are farms all over!!
  19. So go back to NYC!! I have been to many city places that do not have the time of day for you just becouse it is NYC . NJ restaurants like Plucky are doing things that are stepping away from bad NJ restaurants. The great thing is they are not alone!!! If the service needs help write a coment card.
