With the selection of cachacas as represented by Excalibur Enterprise (Bela Pura, GRM, Rochinha & Armazem Vieira), Excelsior Import's Agua Luca & Dhow Trading's Fazenda Mae de Ouro--that were sampled at RumFest in NYC, perhaps it's time for a book dedicated solely to this spirit. Cachaca, should, in the least, be included in any articles referring to cane spirits.

I'd been to Brazil many times and, each time, tasted as many cachacas as there are street corners there!

Cachasa has suddenly caught on in London recently. I think the public are becoming much more aware of it as many bars are serving cachasa rather than rum based cocktails.

So, is it chchaca or cachasa? Cachaca is what the denizens of Bogota call themselves, FWIW.
