I recently was introduced to Porfidio Rum, though I haven't tasted it yet.

Unlike other rums this one is made from sugar cane juice pressed without any additional water. Then it is distilled in a pot still and aged in ceramic flagons for five years.

I have corresponed with the distiller and look forward to tasting this rum at the Rum Fest in New York in October.
