Bottarga

Hi,

I bought some bottarga about a month ago, and it has darkened considerably in the fridge, so that it's now a purple-brown bruise colour rather than the salmon colour when it was fresh.

How long does bottarga usually last in the fridge?

Do you have the mullet or tuna? I have kept the mullet well wrapped in the refrigerator for more than six months and have never noticed any degradation.
