Shrimp Melt

Serves 4 as Main Dish.

This is served at least 2 times a month with baked potato tots. You may wish to vary the amounts, depending on your taste.

  • 1/4 c butter
  • 1 T chopped green onion
  • 1 lb fresh shrimp, peeled and deveined
  • 2 T all-purpose flour
  • 1 T Old Bay Seasoning
  • 2 c milk
  • 1 T celery, chopped
  • 1 large tomato, sliced
  • 8 slices Provolone cheese
  • 4 English muffins, split and toasted

Saute green onions, celery in butter over medium heat, when shrimp are almost pink, add flour and make a roux, add milk and stir until thick. Preheat the broiler, place a slice of tomato on each muffin, shrimp mixture and top with cheese, broil to melt the cheese and serve.
