I have long liked great food, and have been fortunate enough to have grown up in Northern California during the great awakening of California Cuisine. I worked in the wine industry on the winemaking side before moving to Colorado. My life has had some interesting turns to where I am now, and I’m fortunate enough to have a home in Mayagüez Puerto Rico where I plan on growing cacao and making chocolate, but also working with all the local fruits and foods. I am very new to chocolate making and quite the novice, but I am very good at process having been a winemaker and worked in process control. Making chocolate from the tree is perfect for me since it involves process, and fermentation, and it will be a fun hobby for me once I retire in a few years.
