  1. A good samosa should not have bubbles. Bubbles normally appear where it is fried in hot oil. It would be almost impossible to find samosas without any bubbles. Infact bubbly samosas are considered to be a near perfect one.

    Rarely anyone has samosas fried in cold oil as the Halwai cooks would do it when not in a hurry.

    However samosas do end up having a large broken bubble or two.
