  1. Haha. The missing cream cheese is found! I declare it a Harvest Right miracle! Many thanks to Deryn for helping us find Chocolot's cream cheese.
  2. Still on the hunt for the missing cream cheese! Pretty sure Deryn is going to get a cream cheese treat with his FD Will have to freeze dry some more for you.
  3. Know someone who LOVES to make "kale chips" with her freeze dryer. Not sure if she blanches them first or not.
  4. On that note. Someone has taken Chocolot's cream cheese out of my office! Mr. Mike, you wanna send her some j/k I will be searching high and low for your cream cheese.

  6. Tim P. , Your assumption about very low mTorr readings around 100 is correct. The odds of having any moisture left in the food is very low if you have a uniform product that you are freeze drying. Personally, when I see this and there is about an hour or so left in the post-dry I pull the food out check the a thicker piece (if there is one) to make sure there isn't a tiny frozen nugget at the center. Almost always, the product is freeze-dried perfect and you are good to go. The key for this becomes doing a uniform product. Great question!
  7. Mr Mike, I wondered how those maraschino cherries would turn out with all the added sugar in them. I bet Kerry or Chocolot could do something fun with them . On another note, fresh cherries are one of my favorite fruits freeze dried.
  8. Some fun stuff on here about doing full meals and the answer is a definite yes you can FD meals. Soups, stews, pasta sauces, rice dishes work wonderfully. Also, proteins (pulled pork, chicken, steak, ham....) re-hydrate and taste almost identical to the original product. One of the reasons meals you can buy that are commercially FD might not taste quite as good is due to the quality of the food or meal that is freeze dried. The higher the quality of the original product, the better tasting the final product will be. Having said that.....extreme hunger/camping does make everything taste good
  9. This is Matt from Harvest Right. I must say it is a bit intimidating to post here because of all the food knowledge. One thing we do know something about is freeze dried food and it has been fun working with both Kerry and Ruth on their great projects. There have been some posts about bitter avocado and tart apricots. As a general rule the quality and taste of the food going in will be the way it tastes coming out but the flavors are accentuated (both the bitter and the sweet). If you chose to re-hydrate the avocado and make guacamole, you would probably find the bitter diluted greatly. Feel free to post or ask any great/crazy questions you may have about freeze drying and freeze dried food. I'll hop on here from time to time and add my 2 cents.
