    Bacon is closed Monday and Tuesday for lunch. Tétou on Wednesday. They are open for lunch the rest of the week. You need to call to reserve; if there is a congress or festival in Cannes, as there frequently is, they can be booked up. You don't need to tell Tétou you will have bouillabaisse; that is all they serve. I imagine that Bacon always has the ingredients fresh and on hand.
  3. We did the wine pairings at Le Meurice two weeks ago. They were a good way to do it, but our incentive was mostly cost and convenience. There were no great revelations. At our two dinners at Astrance the sommelier had the time and courtesy not to tell us the wine but to let us guess the last wine before he poured the next one. He would then critique our guesses. This was very entertaining and somewhat instructive in itself, but wasn't an enhancement to the cuisine.
  4. We loved Cambray cheeses. They are all from sheep's milk, but there is quite a variety. We bought them at the farm, which is between Albany and Margaret River, not on the beaten track. I do not know how available they are retail.
  5. John, This leaves out www.guidegantie.com which is excellent for South East France.
  6. Well, it is a good question. I was in Paris last week and left €50 in cash at both Le Meurice and Pierre Gagnaire. But the bill for two at both was more than €550. I felt good about leaving the €50, but if I had not felt satisfied, I would have left nothing. I don't think there is an in between at such places. But that is just me.
  7. You could consider Le Procope or Le Ballon des Ternes.
