  1. before i moved to mtl, i lived in kirkland and ile perrot for about 15 years. marché de l'ouest is the only ting that is comparable to amarket in mtl... meat, fish, fruits, oils, vinagers, patisserie... it's all there. right off of sources, behind the civic center. not that big but still... you're in the suburbs. if you want ti have great fajitas, go to jack astors on sources, you wont be disappointed for i have worked there fir 3 years about 10 years ago... but there still the best i have had. have fun in suberbia!
  2. i cant believe you broke it down that way...1,2,3 1 : quality not quantity 2: more peolple from more places!? obviously you havent been in montreal in a while - brazilian restaurants, ethiopian, indian, bangoly, french, italian, chinese, japonese,vietnamese, korean, québécois from traditional to comtempory, fusion, portuguese, russian, suisse, german - and may i go on :are all types of restos you'll find and then some 3:bourgeois in the city : ever been to hampstead, westmount, tmr and to a certain extend old montreal - yes rich peolple have their garages and gardens and backyards!! before making such statements, you should do your research!
  3. 2 resto open and closed on the same spot. but they where also from the same owners and the concept was praticly the same. who knows maybe the street could use a little tapas not to mention a change of major ownership are'nt there enough italian or mediteranean restaurants on the street!!
  4. hey chefworks as far as i am concerned you couls ask your questions where ever you feel most comfortable. whats great about mtl is that we're open to almost anything and that includes all topics of discussion
  5. if you take care of your knives and give a quick sharpen everytime you use them, in theory you shouldnt have to bring them to a pro sharpener
  6. "the guy" on bleury used to be the best in town... before he retired about 4 years ago. so who ever sharpened your knives must be the guy who took over the place... sorry nobody told you before you might want to try corner of papineau and laurier that guy is good
  7. still one has to wonder if it's worth over packing the place when you have to shut down for, what i believe to be 45 days. i guess buenna notte and rosalies will be getting a lot more customers in the next month and a half : the big rent has to get payd somehow on st laurent! maybe other retautants on the street will profit from their repetative greediness
  8. thie may not be a sit down retausrant, but if you want to eat the best phad tai in mtl : bangkok in the faubourg st catherine food court enjoy
  9. the advice your teacher gave you about the 1 or 2 beers is a good one, but you might want to keep it for after your shift. trust me, you'll need it to help you unwind that will most likely become a tradition with you and your co workwers, wich is also a nice part of the job cheers!
  10. although i'm sure your teachers have warned you on the reality of being a cook, i feel it's my duty to let you know that you're about to go through a radical change in lifestyles. because people sometimes forget to mention that cooking in a pro kitchen has nothing to do with what charley trotter does on t.v. (there is no silence and there are no soothing lights if you can handle stress, pressure, heat, noise, perhaps sometimes organized chaos (depending on where you work) none the less a rush is a rush no matter where you work, the stakes are always the same: great food all the time nomatter if you're doing 30 or 300 covers. if you can handle it (not everybody can), it will be the best change of your life. because it is fun, you do learn alot and you will meet interesting people that i can guaranty, ask anybody. my advice to you : dont take it to seriously, dont forget to have fun (because cooking is fun) and you never where it's going to take you good luck!

  13. as anybody seen yasu! i've seemed to have lost track of this extraordinary japanese cook that was walking the streets of montréal all summer. i would assume is in new york somewhere, but i'm not sure. i know of one of you guys that can tell me sure where he is. thanks in advance for helping me find my good friend!
