  1. ___________________________ Mr. Kliman, my friend...I am shocked!...always I am reading..now I must post. "Long, Long way to go?..Dig if you will..THIS PICTURE.. Give me 3,000,000 to design a restaurant, (Does not always equal good taste though.....) Give me 1,000,000 for kitchen equipment (I just HAVE to have that foamer!) Give me 100,000 to spend on opening wine inventory, (Or maybe I'll just LIST the wine..) Give me 100,000 to spend on China, Glass and Silver (If it breaks..I'll buy more) Give me 20,000 for opening food costs (Caviar, foie gras..the usual) Give me a staff of 30 (Just kitchen alone) Let me buy all my egyptian linen..(NOT the dreaded rental linen...you all know what i mean) Let the broker worry about the insurance. Let the accountants worry about the taxes, Let HR hire my 'line' employees...(Upper management will be relocated from a town-fabulous) Oh..Cook some really fantastic food too. .....INC. (At the end of my paycheck) Now!!...if that aint a 4 star restaurant..!!!!!!!! The real costs now have to be factored in. Mortgage everything you own, Borrow everything you can, Take on a city singlehandedly, Hire sincere, honest people, Banish the word NO. Hire waiters without restaurant experience, Be Proud of waiters with no experience. Pay for all mangement insurance, Thank managers for faith, and accepting low pay, HEART, SWEAT and more Sweat..mix in Soul. Oh..Cook some fantastic food, Come home sleepily, to gentle children. Smile in bed for not ripping anyone off! Mr. Kliman!!...humbly, I say..we are not looking to be 'considered' Tof G someday..IN MY EYES..We ARE top of the game...WE HAVE our 4th star.   3. Thank you, thank you! We Just read your email to our bar staff! Anything out of the ordinary will immedietly be brought to our attention. A positive and helpful attitude is what we expect from our staff. (We'll leave the bad attitudes..to bad guests...yes...amazingly ...there are many of those too. Hmmmm just gave me an idea about a new forum. (Hey restaurant friends..Dig, if you will this picture..) Anyway...Sara, Next time you come in...We'lll send you something nice!!   4. Hello Sara, I certainly did not mean to be offensive..Accept my apologies if this was the case. Sometimes postings can be misinterpreted..on both ends. Friday was just as hectic, the overall weekend. We have spoken to our bartenders and they are now aware that if it is too busy to handle, then we cease serving the menu in the bar. We can not sacrife, the quality of service. So thank you for alerting us to this. You have every right to not like everything on our menu. After all, each person's taste is different. How would you like to see the Rabbit Terrine different? We love it this way... Dijon is meant to compliment, not overspice, yes!..I asked due to the fact that some don't eat the mustard...believe me, we watch every plate. (Feedback...yes, yes, yes-in a motivating way? EVEN BETTER!) I appreciate the posting, and thank you for the compliment of the sweetbreads. Are you in the restaurant Biz or just looooooove to eat. Be Well. Meshe
  5. Hello E gullet Posters! Saturday was really outrageously busy. Pretty incredible for a holiday weekend. We were so booked in both the Bistro and Tasting room..We sent many guests to the bar then at one point, I was even trying to disuade people for even trying to eat at the bar. Service is very important to us. The bar should not be any less attentive. So I guess that in the future, we will just have to turn people away other than have them have a bad experience, such as one poster experienced. ....Sorry to have lost a guest. We wish that they were able to experience Eve the way we would have liked. We will however continue to do our very best. I LOVE The Rabbit Terrine..dear Posters, Please do enjoy the Dijon Mustard that accompanys it. Also I might add, very humbly, It would be a bettter idea to not be intoxicated, eat, then post. Just a thought., My tastebuds never worked properly under those circumstances either. Be Well All.
  6. Wow!! Love all this chat about Eve!! Really...It only helps us get better. Funny thing, we have sold more adventurous food itmes here, in this li'l old town; guinea hen, (2cases!?),Pigeon..oh yes, then there's the 'stinky' SKATE....items, that were a hard sell downtown. The clientele here is actualy very savy..when it comes to dining..(oh, and quite fashionable,) They have roots here in VA-Ginia, but have homes all over the world. (A bit of market survey..before deciding to open house here.) Thanks so much...bring on more comments...happy to hear them..and I, am just recently, getting over the horror of providing 3! menus.
