  1. Hello. I'm attending a B&P Program at CIA. I highly recommend that you buy, or check out from your local library, The Professional Pastry Chef and The Bread Builders. Both books are "must haves" books to learn about starters, yeasts, flours, breads, etc. Good luck and happy baking.
