I had to follow that very dark dish above with something light and pretty. This is the Citrus Risotto from The Zuni Café Cookbook p 196. Recipe available online here. The risotto is very pretty with the little flecks of pink grapefruit and the tartness of the citrus is balanced by the mascarpone that's added just before serving.
