The prepackaged Bulgogi soup was good but it was not the way Charlie's mom makes it.  From the description it is a soup base called ox bone soup and several soups start with it.  It makes no sense to a Westerner like me to go to such an extent to make a cloudy milky white soup with almost nothing but beef bones and water. I made it once 8 or 9 years ago when Charlies mom came for his wedding.  She liked what I made.  This batch took three days to make because you should use the same bones to make three batches and combine them all in the end.  Most of it is in the freezer now but I heated up a small amount with some noodles, green onions and bulgogi.  Earlier I put a chuck roast in the slow cooker and we had both for dinner. I forgot to take pictures until we were already eating.

Our last supper for January 2023 involved cleaning out the fridge freezer and using the seafood found in there!

It's a simplified version of Bouillabaisse posted in Chatelaine 2009. Instead of lobster, I added pickerel, a package of cooked mussels, and some baby ablaone.

Loooong day at a conference (semi-)far away from home. Was not feeling to go out anymore to source food, so I had to make do with what I bought on Monday, when I arrived …

I decided to have a go at the serious eats pressure cooked version tonight. It’s a lot simpler than most recipes I’ve made so wasn’t sure how it would turn out.

 

The answer is that it’s bloody perfect! Has a really nice tang to it and that great balance of creamy richness with spice and a little heat. 100% I’ll do this again.

Chicken thighs done under the broiler then charred a touch with the blowtorch to give a bit of tandoori flavour.

The finished article - even passed the “kitchen porter test”, both boys loving it and going back for seconds. 

Looks fabulous. My go to recipe for butter chicken.

That looks really scrumptious. I haven't bought a magazine in years but my Mom had a subscription to Chatelaine (and Good Housekeeping) for many years and they did have some good recipes.

A friend of mine was talking about this dish recently so I felt compelled to make another batch, even though we had it a couple weeks ago.

Ayam buah keluak. This time though, I didn't stuff the Brazil nut shells with the keluak meat, I just dissolved 1 of them in the curry as it was cooking. Made a really big difference. This was probably the best I've made it.

Hmm … Indonesia is about 15h flight distance from here, NYC only 8h. I think I know my next gastronomic holiday destination 🤗

I had a piece of beef tenderloin in the freezer and couldn't decide what I wanted to do with it.
So I decided to go with an old favourite. From a friend. 
We were visiting Sue and Ray in Michigan probably 40 years ago and she made this for dinner.
I've been making it off and on since then.

This really does look delicious. Makes me want curry.

Another early dinner after a snowshoeing hike. I'm glad I got out early because I had below -10 C  and clear blue skies. Styrofoam snow and an absolute need for good sunglasses. It's clouded up since.

Chile and black bean shrimp, old school Chinese Canadian eggrolls and a tomato, cucumber and green salad. With a NS Keith's IPA.

No, those are standard flour tortillas.  The filling is cauliflower cooked with poblano peppers and onions in a sauce made from red chiles and fire-roasted tomatoes.

While wondering what to have for dinner, Charlie told me he was making kimchi stew (Kimchi-Jjigae)  I don't know what all he put in it except some of the beef bone soup stock I made a few days ago, Napa kimchi, tofu and Spam.  I looked up a recipe and it uses pork belly instead of Spam, sesame oil, red pepper flakes and paste, green onions & Kimchi brine as some of the additional ingredients.
