Hello Everyone! I am starting this off a bit early since I am on the West Coast and by the time I finish running around tomorrow it may be a bit late for some. I live in the South Bay of Los Angeles, on the city versus the ocean side. This is a view from the peninsula looking out to the ocean. Catalina Island is 26 miles out there but obscured by haze. To accompany the bit of Indian vegetarian take-out I plan to pick up I would normally do rice. Since I picked up that summer squash yesterday, and because I love corn, I opted to do a vegetable corn bread. The base is Jiffy cornbread mix. I am more than capable of doing the dough from scratch, but at 55 cents a box or so, I find this works for me as I do not end up with cornmeal aging in the cupboard.
