They are crystals and are in a variety of sizes within the jar. Mine are so old now that they have become cloudy. They were distributed by Streits and Rokeach and the label said "Sour Salt (citric acid)".

Thanks for your reply. It came in crystal form in the past. In fact, that is how I used to buy it, but it has been years since I bought any and now I can only find it granulated.

Where can I purchase sour salt in crystal form/ I have seen it granulated, but I have not found it in crystals.
