Hi guys
The original jerk recipe do not call for soy sauce,the moisture that is present usually comes from the aromatics ie:the escallion,onions, peppers etc. not to mention the high salt content which preserved the meat due to the fact that refridgerators were non existent ,the salt of course plays a big part of the moisture extraction from the fresh seasonings.
In modern times the addition of soy sauce has become popular as a carrier of the seasonings, due to the fact that it would require quite a bit of fresh seasonings to be blended or muddled to extract the liquid necessary to act as the carrying agent or juice.

I have good news for you.Appleton V/X is now available in miniatures,not sure where they are available in the US but they are all around here in jamaica.A matter of fact i think they have a miniature variety pack.Called the the supplier today and she confirmed.

Hi Guys
We have a product here in jamaica that we also call wet sugar,nothing hi tech as the japanese version but it has been around for the last 70 years or possibly longer
the products is actually pulled of the sugar cooking line right before it reaches molasses state somewhere between dark brown sugar and molasses, the consistencyit is almost like a jar of brown sugar with a small amount of water added.We use it in jamaica to make Easter buns and a drink called wet sugar lemonade or limeade.
The product is only done by a handful of old time sugar workers that still have access to the governments boiling facilities. I hope you guys dont mind my 2 cents just a little info on a different type of wet sugar.

Try Jamaican Blue Mountain coffee,i find it to be very smooth.I use the alex twyman brand it is the best blue mountain coffee you can buy, they sell beans only and make sure to use spring water and a good french press.also use a grinder that
doesn't grind at too high a speed that will cause the coffee to heat up (heat is the enemy). I must admit i am Jamaican but have two restaurants that cater to international guest and all we get is raving reviews about our coffee.Try it and let me know what you think.

Happy New Year! I am trying to find a liquor that is made from the Lychee fruit usually found in Asian countries.Any info would be helpful.
