Chinese New Year

I've been dying to do Chinese New Year for ages, but it's almost always on the same weekend that I've booked up for friends' birthdays or conventions. :-(

China 46 is doing something; I was there last weekend but didn't take much note other than I saw a sign in the window.

China 46 has a great menu + the lion/dancers and drummers...and the yummiest soup dumplings!!

Here's the thread on (I think) last year's event...I know there are others on here from previous years as well.

Curlz, beware: their soup dumplings were pretty bad this past Sunday. Wrappers were too thick, filling wasn't very flavorful, and the broth had mostly leaked out and was a very different recipe. I think I'd not recommend it on the soup dumplings alone since everything else was nice and tasty.

They did have posters of lion dancers and stuff, so C46 looks like the real deal. I believe Chinatown in NYC does something annually as well.

Shanghai Park? Details! Do they do a dim sum or is it just off the menu? Location?

Shanghai Park is real Shanghai style, for dim sum in the authentic (Hong Kong) sense, you'll need to head north to the Wonder Seafood Restaurant in Edison.

Shanghai Park is in downtown Highland Park and at one time, was legendary for its soup dumplings. It's been a couple of years since I've been there so I have no idea if they still live up to their reputation.

Grand Shanghai on Route 1 in Edison also has a serious Shanghai menu including dumplings and could be worth trying.

The Edison/South Plainfield/Highland Park area is filled with ambitious Chinese restaurants but their quality can really vary over time. Sadly, there is no way I can eat at all of them regularly, although I certainly try.

I've not been to Shanghai Park so I can't comment, but I used to go to Grand Shanghai. However, when the ownership (management?) changed hands, I found their food went downhill. It's ok, but certainly not as tasty as before. As a result, I have not returned for the past year or so.

As an attempt to get back on topic, how do the styles of food differ on new year's between northern and southern (such as Hong Kong) styles? I've only ever experienced Hong Kong style. I would be surprised if northern style were just special dumplings (as with the offering from King's Village mentioned above). In which case, does anyone know of a northern style restaurant offering "traditional" new year's food? Dim Sum Dynasty in Ridgewood has some special set menus to choose for new year's.

Went to King's Village for a light lunch. No special dumpling menu at lunch. I had the lamb sticks, steamed lamb dumplings and soupy buns. Soupy buns were just good but the two lamb dishes were very good. I enjoy that most of the steamed dumplings have lots of juices inside. Gf had some sort of pork and noodle dish as she is more of a plain eater. I see so many good looking entrees that I never get to try because I don't have a group. This would be a good place for a weekend lunch meeting.

I had the steamed crab buns at Shanghai Park last thursday along with the 3 ingredient dumplings from King's Village. Both were unbeleivably good and both were inhaled rather quicly.

I've finally learned to call ahead enough in advance that I don't burn my mouth with the Shanghai buns. They warn me every time to wait. Everytime I know I should wait. Everytime I don't wait. I bite into one, parboil my mouth with liquid lava broth, chide myself for being stupid and then immediately put another in my mouth and do it all over again.

I/we (family) did Hunan Cottage (Fairfield) last night. No dragon, no tiger - but great food. Packed, bit of a wait...

Their Peking Duck is dreamy (always on menu) but as far as specials go, had a short ribs with bamboo dish served on bok choy.

HC is my NJ chinese fav; consistant and high quality (thanks for tip Rose).

Rainbow Salad: tofu, carrots, seaweed, lotus roots, pine nuts, soybean sprouts and black mushrooms

Surf and Turf Soup: abalone, shredded pork and mustard greens

Mains

Mandarine Braised Duck: half duck, scallion, tangerine, ginger, and steamed buns

Sizzling Lotus Pork Deluxe: pork loin, chinese sausage, celery and lotus roots.

Desserts

Mango Ice Cream-Filled Mochi

Traditional Chinese Rice Cake

Everything was excellent as usual.

They are serving the special menu from February 17th thru February 27th. There are several other choices for the prix fixe menu and I will try to include them later.

I had ... the 3 ingredient dumplings from King's Village. 

What are the three ingredients?

Pork. vegetables, and shrimp.

They also had special dumplings for the New Year. An order had two green Spinach dumplings stuffed with mushrooms and bean noodles, two orange yellow pumpkin dumplings with shrimp filling, and I forgot the third but it was white and I beleive stuffed with pork.

Where is Hunan Cottage located in Fairfield? Say, in relationship to Rte 46. I am desperate for decent Chinese in this area. Can't wait. Thanks.

I just returned from Chinese New Year at china 46. Very, very good! We had the braised pork belly and the chicken with treasures. The dragon was fun. Worth the visit.

      Re- thread on "favourite Chinese cookbook": There is much discussion on what is authentic, recipes that are not found in any of today's Chinese cookbooks. Muichoi suggested starting a collection in eGullet. This may be a way for all of us to start actually recording recipes that have been passed down through generations.
      Muichoi requested a recipe for dried bak choi soup. I am sure there are many "recipes" for this favourite. I can recount the different ingredients, but not the amounts - just a bunch of this, a few of those, etc.

      I am looking for recipes that you might consider as "home style" cooking that are common/popular in Shanghai (or around that area). Preferably things you grew up with that may or may not be widely known... I have a friend who was born and raised there and want to surprise them... (so asking them what their favourites or what they grew up eating is a NO-NO - they will see it coming a mile away).
      Any ideas?

      Congratulations are due to Fuchsia Dunlop, whose "Food of Sichuan" has just been published in a Chinese language version - a rare honour here. I've ordered a couple of copies as gifts for local friends who loved the Engish version, but struggled with some language issues.

      Chinese food must be among the most famous in the world. Yet, at the same time, the most misunderstood.

      I feel sure (hope) that most people here know that American-Chinese cuisine, British-Chinese cuisine, Indian-Chinese cuisine etc are, in huge ways, very different from Chinese-Chinese cuisine and each other. That's not what I want to discuss.

      Yet, every day I still come across utter nonsense on YouTube videos and Facebook about the "real" Chinese cuisine, even from ethnically Chinese people (who have often never been in China). Sorry YouTube "influencers", but sprinkling soy sauce or 5-spice powder on your cornflakes does not make them Chinese!
       
      So what is the "authentic" Chinese food? Well, like any question about China, there are several answers. It is not surprising that a country larger than western Europe should have more than one typical culinary style. Then, we must distinguish between what you may be served in a large hotel dining room, a small local restaurant, a street market stall or in a Chinese family's home.

      That said, in this topic, I want to attempt to debunk some of the more prevalent myths. Not trying to start World War III.

      When I moved to China from the UK 25 years ago, I had my preconceptions. They were all wrong. Sweet and sour pork with egg fried rice was reported to be the second favourite dish in Britain, and had, of course, to be preceded by a plate of prawn/shrimp crackers. All washed down with a lager or three.

      Yet, in that quarter of a century, I've seldom seen a prawn cracker. And egg fried rice is usually eaten as a quick dish on its own, not usually as an accompaniment to main courses. Every menu featured a starter of prawn/shrimp toast which I have never seen in mainland China - just once in Hong Kong.

      But first, one myth needs to be dispelled. The starving Chinese! When I was a child I was encouraged to eat the particularly nasty bits on the plate by being told that the starving Chinese would lap them up. My suggestion that we could post it to them never went down too well. At that time (the late fifties) there was indeed a terrible famine in China (almost entirely manmade (Maomade)).

      When I first arrived in China, it was after having lived in Soviet Russia and I expected to see the same long lines of people queuing up to buy nothing very much in particular. Instead, on my first visit to a market (in Hunan Province), I was confronted with a wider range of vegetables, seafood, meat and assorted unidentified frying objects than I have ever seen anywhere else. And it was so cheap I couldn't convert to UK pounds or any other useful currency.
       
      I'm going to start with some of the simpler issues - later it may get ugly!

      1. Chinese people eat everything with chopsticks.
       

       
      No, they don't! Most things, yes, but spoons are also commonly used in informal situations. I recently had lunch in a university canteen. It has various stations selling different items. I found myself by the fried rice stall and ordered some Yangzhou fried rice. Nearly all the students and faculty sitting near me were having the same.

      I was using my chopsticks to shovel the food in, when I noticed that I was the only one doing so. Everyone else was using spoons. On investigating, I was told that the lunch break is so short at only two-and-a-half hours that everyone wants to eat quickly and rush off for their compulsory siesta.
       
      I've also seen claims that people eat soup with chopsticks. Nonsense. While people use chopsticks to pick out choice morsels from the broth, they will drink the soup by lifting their bowl to their mouths like cups. They ain't dumb!

      Anyway, with that very mild beginning, I'll head off and think which on my long list will be next.
