Storing cocoa butter

I would agree....Interesting thing I ran across yesterday when lookin into cocoa butter storage...I found a study that was suggesting that the cocoa butter's viscoscity can change depending on the temperature of which it is stored...hum....I might buy the study to read on...

cool and make sure it's in something tightly sealed--a bucket as advised above is good.

Air, leading to oxidation is the enemy of coca butter--any fat--think butter left out uncovered.
